  • 1. Throw all ingredients in a high-speed blender.
  • 2. Blend. This recipe can be a bit of a @#$#$% when blending, so if you're having trouble getting the mixture to mix properly, turn your high-speed blender off and insert a spatula down one side to let a pocket of air down near the blades. Then remove the spatula, put the lid back on and continue blending--going from slow all the way up to fast again. You can also add a bit more water (mentioned above) but I try not to add any more water than three additional tablespoons because I like to keep the texture nice and thick.
  • 3. Serve with noodles . For noodles, you all know that I am obsessed with kelp noodles, so that's what I use for my raw macaroni and cheese extravaganzas. But if you're cheap and/or disorganized and don't have raw kelp noodles, you can make zucchini noodles using a carrot peeler or a spiralizer.
  • 4. Garnish with lots of pepper! Normally, I don't really like pepper, but this recipe just totally gets better when you sprinkle a lot of pepper on it. Don't ask me why. It just does. Oh! And you could also even serve with raw ketchup :)
  • Enjoy this raw macaroni and cheese recipe! I don't have children, but something tells me they would just love this raw recipe as a treat on a cold, wintry day.

Raw macaroni and cheese... This recipe was born out of me saying to myself, "I need some raw macaroni and cheese right now or I am going to scream!" So I busted out my Vitamix and a sac of cashews and got to work creating this simple but ooeeey, gooey cheesey recipe.

Beware: this raw macaroni and cheese sauce is very potent! Start with a tiny bit of sauce and mix it into your noodles and then add more as your tastebuds dictate. If you add too much this raw mac and cheese recipe can be overpowering and way too saucy. So start slow with the sauce!

OK, and due to my noodles it's not really a raw macaroni and cheese recipe, it's more like spaghetti and cheese, but the taste is what's important, right??!

I've just started making your raw recipes. I really have been enjoying them. But I have food allergies. I am allergic to nutritional yeast, yeast and dairy plus a short list of other foods. Is there a replacement for nutritional yeast for the mac & cheese and other recipes you have?

I love this cashew cheese recipe!! Sooo delicious. I'm really glad that I didn't have to soak the cashews; everyone else says to do do, but I couldn't taste the difference. Except, however, how good your is.
Basically, a delicious recipes that is easy and quick to make!!

Yummy! I've just started working with nutritional yeast and wow I have been missing out. This is a go to for me now when I'm feeling super lazy or in need of some comfort food. I really like adding an avocado to this sometimes too.

Very nice. I like my food less salty so only added half tsp. it was still lovely, and VERY filling. I had mine with courgette (zucchini) noodles.

Hi there, I love the sound of this recipe, I don't have the Spirelli because frankly I am not sure which one to buy. But can I use Buckwheat(Sobe) noodles for this recipe? I know that does not make it a completely Raw dish but I do know that it is a great alternative to pasta.

Hi Colleen, kelp noodles are "noodles" made from an edible brown seaweed (called kelp). Not all kelp noodles are raw, so make sure you read the label.

I was planning on pouring the cheese sauce on broccoli instead. My cheese didn't come out as yellow-orange-like as the one in the picture. In fact mine just looks like a peanut butter smoothie. And it isn't that "cheesy" tasting. I thought it was going to taste better after reading the reviews. It isn't that potent either. I'm pretty bummed about the turnout but I will try again another time. Maybe it is because I used a different brand of nutritional yeast? (Sorry for the sideways picture)

This was very yummy, but I just have to say that mine looks very different from the picture of yours in color. Mine was very similar to the color of Mac and cheese... More yellow. I followed the recipe to a T, but was just wondering.

Okay so I really appreciate your site. Love the attention you pay to simplicity and speed while still creating a succulent dish. Tried the one minute fudge and it was great though a bit powdery (but I probably messed up the proportions) Better than any much- less- healthy five minute cake or cookie I've tried.

Now to the point: I don't normally follow a raw diet, but seeing how easy and tasty it can be, I'm interested in incorporating it more. However, due to candida concerns, I don't want to add yeast. Is there a substitution I can make considering I'm not a strict rawtarian?!

Hi Ann, Yes high fruit can cause candida problems in some. It might be wise to transition more slowly from your old diet to your new - rather than go cold turkey, so to speak :) Also you can look into some probiotics and maybe grapefruit seed extract? I don't know a lot about this (i don't have candida probs myself) so more investigation will be necessary!

When I was adding the ingredients to the blender, I thought, this has the same ingredients as everything else, bar the yeast, and wasn't excited at all. The moment I tasted it, I said, WOW, this is delicious. I served my self one portion and had to go back for more!

I made mine in a vitamix and had no issues whatsoever. No soaking either.

After this I made the cheescake for tomorrow's dinner! Can't wait!

Love your website! We've made quite a few recipes and have LOVED all of them! My question for you is what brand of kelp noodles do you buy that you trust? I would like to buy by the case load, as many of you here do, but I don't know which site or brand to buy from. Also, do you have a nut pate recipe? I'm not much of a 'traditional' mac-n-cheese guy, but this raw version (with kelp noodles) was really good. It is pretty rich, I couldn't eat very much. But I'll have some more, that's for sure. Thanks Laura-Jane!

Rich is definitely the way to describe. If you've got leftovers, it can also double as some other things, like a bit of a mayo on veggie burger or a little raw wrap/sandwich - or also as a great dip for broccoli!

Made it today.Used kelp noodles ( w green tea).It has a bit funny crunch and odd aftertaste.Liked it,don't love it.Cheese sauce is outstanding,I used a bit of turmeric for more cheddarich color.
Skipped yeast,I don't use it.

Two thoughts:

1. The nutritional yeast is really what provides the cheese flavor

2. Kelp noodles - if you dry off the kelp noodles, then combine noodles with generous helping of sauce and then leave the whole thing in the fridge overnight the crunch goes away

I was just looking up RAW CASHEWS on Amazon. Some of the 10 lb cases work out to $6 and change a pound, even with shipping. I'm going to order one and keep it in my fridge, because I can't handle $10 a pound at the store either!

Awesome Juan! I find that ordering cashews is worth it because they are really expensive locally. However, for me it is cheaper to buy almonds and sunflowers locally (no need to order them). Cashews are expensive because they come fruit a big piece of fruit, and there's only 1 cashew on each fruit. Nature is crazy!!

Wow! This was yummy! I am formerly the world's pickiest eater, so that is a huge compliment.
Question: Do you happen to know a place online to get less expensive raw cashews? I paid almost $9/lb and that make this dish a little too gourmet for my budget. Any ideas?

This sauce is AMAZING ! I haven't eaten cheese for around 2 years as I don't digest it well and I've really missed it, but no longer! I only made a 1/4 of the amount to try it out, I should have made more! Thank you so much for your really simple, effective raw recipies and resources. I have found a new food love!

I have a question, why do you only use the white part of the courgette? Isn't the green where all the good stuff is? Is this just aesthetic? Or is there another reason?

I'm in Australia as well & you can buy the yeast from nutritional stores - here it's called Savoury Yeast flakes.

Ps. Ms Rawtarian - Your website is amazing!! So simple yet delicious! My 6 year old and my 20 month old girls LOVE LOVE this. I can't find kelp noodles in Australia so I just use carrot or zucchini.

Not sure if this was mentioned or not but kelp noodles have a much better texture after they've been soaked in water and lemon for a few hours. I've even had them sit in this cheese sauce overnight in the fridge and the outcome is a less crunchy "al dente" texture to the noodles. :)

Is the crunch similar to a regular pastas al dente texture? And if I wanted to soften the mac & cheese overnight in the fridge, could I re-heat in my dehydrator? BTW, I love your site! Your recipes are delicious and easily made by common folks. I had the tacos yesterday, wrapped in lettuce leaves topped guacamole and cilantro. Yes, they were delicious! Hi Mary! Pasta similar to al-dente texture? Yes, pretty similar, but it is best to let the noodles and sauce soak together for a bit so that they are not too rubbery - then once they soften a bit they will be like al dente.

Reheat in the dehydrator? Definitely.

PS: Glad you like the tacos. They are fun to eat!

Many thanks - I made this last night and my husband liked it also! We are on a cleanse and looking for raw recipes that will fill us up. The kelp noodles are great - and the sauce is very creamy. The ketchup is amazing and I am now on the search for more things to do with it - when I am finished with raw only, i will be more than happy to have this raw ketchup with baked fries. I love this alfredo with kelp noodles, only lately I've been actually having my kelp noodles with my mac and cheese sauce instead - which I love even better! And with ketchup is fun. And the chick salad and mush soup are great too. My mouth is watering :) You should definitely try some sweets too, some of my faves are the brownies with icing and the cheesecake.

I am new to raw vegan and find your website amazing. I would love to try this on my kids, but unfortunately they have nut allergies. They can eat almonds though. Have you ever tried these recipes with almonds? So many raw recipes use cashews!

Hi Jennifer, cashews are used predominantly for their "creaminess" - almonds just won't be the same. You can sub macadamia for creaminess in some recipes, in others you could try avocados (but avos won't work as a sub in this recipe).

Thank you, that was helpful. Actually, pine nuts are the saving grace for the creaminess factor, because they are not really "nuts". Pine nuts are actually seeds thus eliminating the tree nut allergen! Expensive alternative, but worth the splurge for a special occasion.

We eat raw every now and then. It gets expensive with 5 people. This recipe sounds great, by the way. I will have to try it. When we have noodles, we use kelp noodles. I have to heat them a little in what ever sauce we have because they crunch and my oldest does not like it when they do that. Is there another way to soften them up like regular noodles?

Some people soak in lemon water before using  - the acidity softens. Then rinse before using to get rid of lemoniness.

Also, instead sometimes I like to apply the sauce the night before sometimes and stir thoroughly. Then refrigerate. The sauce softens them if left long enough

I loved this recipe, I added a bit of carrot to the mixture to change the color to more of a orange yellow, and I just used the nuts I had on hand (1/2 almonds, the other half sunflower seeds). The pepper, I agree added a ton.

Now - the addition of the carrot is a mighty fine idea for a cheddary cheese look! Haven't tried this myself yet though - I wouldn't add too much in case it changes the flavour

I got in late and was STARVING so I wanted something fast and really couldn't face a salad in the cold weather. I had never tried this recipe before and was reluctant to be experimenting when I just wanted to go for a sure thing. I was not disappointed! Absolutely delicious, and I really appreciated the "crunch" factor. But you're right, it is a $^&#@ to blend!!

Sorry, this is confusing that I put a big dollop of ketchup on top. Yes, Kristine - you are correct! It is alfredo mixed with noodles with ketchup plopped on top :)

Hi!! So i've been craving mac n cheese and i'm trying to get back in shape so gave up noodles and I LOVE Kelp Noodles. I made the recipe according to directions but for some reason it doesn't at all taste cheesy, it does have a yeast flavor (I believe that is what i'm tasting that isn't to my liking) I tried adding some garlic to it as some others have and still had a yeasty taste... is there something i did wrong? I used Red Star Nutritional Yeast, freshly opened.

I just made this dish with zucchini "noodles" and it is goooood. I added a tiny bit of garlic to the mix to offset the sweetness of the cashews and make it a little more comfort-foodish. I must to admit I am a bit of a cheater who only flirts with raw foods and I did slightly heat the meal in a saucepan.

Made this for dinner tonight. Yummy! I really like your recipes! Tried the kelp noodles as well for the first time today, different texture, but after a while I didn't even notice. The sauce in this recipe reminds me of my mom's homemade mac n cheese with white cheddar, just milder. :)

Do kelp noodles taste most like macaroni? I would think they would taste more "kelpy" as in seaweedy? I'm trying to please kids here. They have no patience for acquired tastes. Any good ideas?

Good question! No, kelp noodles do NOT taste seaweedy or fishy at all. They are VERY bland - they have almost no flavor.

Of course, some other types of seawood, like dulse, do taste very"fishy"

I made this tonight, and it was out of this world!!!! So creamy, its almost like a nacho cheese. I am totally impressed, and it came right when I was craving something SAD. No worries, I am back on my raw track thanks to you!

This recipe is absoultely amazing and I'm in heaven. I soaked my cashews for an hour or so before and it blended up very easily in my non-vitamix, and I just did some peeler zucchini noodles. Super easy for a newbie. My belly is nicely full and I'm so happy! Thanks!

Mine tastes like macaroni and cashews. I'm trying to figure out what I did wrong. How cheesey is nutritional yeast supposed to taste because mine doesn't really taste very cheesy.....hmmmm

I wouldn't say that it tastes TOTALLY like cheese, but there is definitely a hint. It is kind of more like a white cheddar or swiss flavor than cheddar flavor.

Next time try adding more nutritional yeast to taste.

Another fabulous recipe! I made this for lunch today, and it was brilliant. I was surprised by how much the sauce tasted sort of swiss cheese-ish. Delicious! And warm from the Vitamix...ahhhh. I added a sprinkle of garlic powder on top, and it was terrific.

FYI, I used zucchini noodles. I spiralized four small-to-medium zucchini and I still have a ton of sauce left over. Yay!

Thank you so much for these easy-to-follow recipes. As someone new to raw, I can't tell you how much I appreciate your approach.

I’m so so glad I found your website! I’m new to the rawtarian lifestyle and I’m very picky with fruits n veg but I want to eat healthy n lose some weight. I’ve been doing the juicing and smoothies but I need something more satisfying…ESP coming off the s.a.d. Lol! So I’ve tried chia seeds which I love! I made this for dinner (kelp noodles for me, cooked macaroni for my bf), and it was awesome! I ate so much that I'm sick to my stomach! I think the nuts absorbed the water from the cooked noodles, because bf's sauce looked like clotted cream. Mine was amazing. The kelp noodles don't absorb the sauce, and don't much flavor on their own, so they taste like pure cheezy sauce. Yum! I like the recipe so much I posted it on my facebook!

Oh my lands! I just got my shipment of kelp noodles in the mail yesterday, so I was excited to try this. It is wonderful! I was surprised that my hubby and teenage daughter wanted to taste it, too. I am quite addicted to kelp noodles. I order them by the case load. :) Once basil starts coming in season and you can get it cheaper, buy loads of fresh basil and make pesto and serve with kelp noodles (if you'll still have any left, that is!!) :) Yum.

I am going to make this recipe this week and was wondering how long the "cheese" keeps (since it is just me in the house).

* And the kelp noodles are amazing. I use them a lot instead of zucchini. It's nice to switch things up from time to time.

1. This recipe keeps very well! Definitely a few days+ and it does not lose any of its goodness nor does it get gross or anything. Be sure to keep it tightly sealed.
2. You are also lucky because you get to eat this all by yourself!!!! :)

This recipe will definitely make a few meals for you 3 or 4 meals, I'd say. I have eaten a whole batch of this on its own over a couple of days, so no worries re: portions for one.

should the cashews be soaked beforehand, or does it not matter?

It is not absolutely necessary to soak first, but it is a good idea and it will be easier to blend if you soak the cashews for an hour or so and then rinse them and then make the recipe.

(I have made this without soaking though and it will work, but isn't the easiest to blend.)

That was kind of a weird response that I gave above about soaking. I make this in my Vitamix all the time and I never soak. You only really need to soak (to soften the nuts) if your blender is crappy.

I have only tried kelp noodles once and I hated them. I don't know if I did something wrong, or bought the wrong kind or what, but I had one bite and had to throw the rest out. I followed the directions, and soaked them but they were awful. I did have them plain though, perhaps that was the problem?

Yes, you shouldn't eat kelp noodles plain!! They are just boring. The whole reason we have noodles is to coat them with sauce :)
