Hi!!! I'm so excited I found you!!! I am enrolled in your courses and have completed some. While 100% raw is not doable for me right now I do eat raw quite a bit.
What I am really interested in is lowering the nut usage too. I have read Irish Moss is a great way to do this. There are not many recipes out there that use it. Have you thought about exploring into that?

Thanks for sharing your story. It was very inspiring. I'm going into my second attempt of converting to raw foods. Just like you shared in your story, i think I might have gone at it a bit too hard the first time around but i made it for three weeks eating raw food. When I stopped it wasn't even really because I wanted to but we were in the process of moving and it became an inconvenience. So, I went back to convince food like pizza and other junk for a time and before I knew I had fallen off the wagon. However, I can't forget about how much better I was feeling while eating raw food and how much worse I felt after a just a few weeks of going back to processed food. In my first three weeks of eating raw foods I had lost 23 lbs and gotten rid of my joint pain. (I think mostly due to all of the water I was retaining from sodium and processed food.) I'm ready to get back into it now but I'm going to ease my way in a bi more this time. I have a food processor, juicer, and blender. My next goal is to obtain a dehydrator. So now all I need is some determination. Thanks for sharing all of your awesome recipes that make raw foods look way more appealing. Thanks to you, I think I can make this a forever change.

We must be on the same wavelength because I have a bag of irish moss in my cupboard that I haven't even opened yet. You're inspiring me to experiment! More on this soon
