  • 1. Throw everything in a food processor. (Do not use your blender for this.)
  • 2. Process very briefly until your mixture resembles the above photo.
  • 3. You can let this raw recipe sit for half an hour or so to let the flavors combine briefly, but this raw vegan meal does not keep for very long so eat up!
  • 4. Serve as above, in lettuce wraps, in a hollowed out sweet bell pepper, or serve with avocado chunks on top!

Raw vegan "chicken salad" recipes don't taste like chicken. Rather, it's their texture that give these raw vegan chicken salads their "chickenness."

This raw chicken salad recipe gets that chicken-salad-like texture by using raw cashews.

In order to make this recipe you need a food processor. And be warned, this recipe should only be food processed for literally just a few seconds (depending on the strength of your food processor) because you want to keep this raw mock chicken salad recipe quite chunky.

In other words, do not overprocess. I like my raw vegan mock chicken salad to be similar in texture to the photo.

Warning: This recipe DOES NOT keep well so you may want to half the sizes if you have a small household. Truly, it's best fresh so plan to eat it all right away.

I love the simplicity of this raw vegan chicken salad recipe. This recipe is also a good contender for substitutions... Just make sure you've got the ratio of  nuts to vegetables as per the above recipe. Do not omit the apple or the cashews, though, because they are integral to the flavor of this delicious, easy raw vegan chicken salad recipe.

Hi my husband and i have just started eating your yummy recipies and i was just curious, are they meant to just be for one person? the servings are really big and ive been sharing them with the kids, but i was just wonding how many people thy are ment to serve. i dont want to eat to much. my husband can eat the lot :)

i have all the ingredients in the processor ready to whirl. gonna stuff it in a pita with avocado and veganaise for a light summer dinner tonite, cuz all of a sudden it's 85* here and who wants to turn on the oven?! hoping its a winner!!

I'm just beginning my raw food adventure. We have a local café here in town who makes magic with her raw food. I wasn't prepared for this recipe, my food processor is way to small. My batch ended up more on the creamy side. I left most of it in the fridge over night... It was super delish the next day. I made raw pasta sauce and ate them together. The combo was amazing. Thank you for your recipes!!/

Hi Carol! You could just make it normally in the morning and then take it to work for lunch, it’ll just be a bit soggy and not as good. But still fine. It's up to you!

I really enjoyed this recipe. I wish that I would have made 1/4 the amount because as you mentioned, it did not keep well at all. I ended up replacing celery for radish because that's all I had on hand, it turned out great. I'd make it again but definitely in much smaller portion. Thanks!!!

Great recipe! I brought it to a potluck dinner last night while others ate pizza. A few tried this and really liked it! One friend even asked for the recipe. I may also halve the nuts next time and add some more veggies as another poster suggested (so I can eat more next time!) ;)

I am loving your recipes, but a lot of them contain a lot of nuts and a number of raw foodists suggest not eating more than a handful of nuts a day.. what is your view on this?

I made this last night and would recommend the following: halve the amount of red onion-this had a very strong onion flavor to it; process all veggies and then add in the remaining ingredients for a 'chunkier' chicken salad, processing everything together and trying to get the veggies chopped turned this into more of a pate. Overall I enjoyed this and look forward of experimenting with flavors-I plan to add curry and raisins next time.
