CRUST

1. Process the macadamia nuts and dates in the food processor.

2. Sprinkle the dried coconut on the bottom of an 8-9 inch springform pan. Press crust onto coconut.

CHEESECAKE

3. Blend cashews, lemon juice, honey, gently warmed coconut oil, vanilla, salt (if using) and 1/2 cup water until smooth or adjust to taste.

4. Pour mixture onto the crust. Remove air bubbles by tapping the pan on a table.

5. Place in freezer till firm. Remove cake from pan while frozen, place on a serving platter, and let defrost in the fridge.

RASPBERRY SAUCE

6. In food processor, process raspberries with dates until well blended. Don’t use a blender; otherwise the seeds become like sand.

I just made 3 of Ani Phyo's cheesecakes for our neighbors and this looks almost identical to her's. Except she uses agave syrup in lieu of honey.

Well depends on the agave you use. I suppose. I was also wondering that about maple syrup if they would procress it at a lower temp, would it still have that same taste and all.

I am allergic to cashews and mac nuts to my knowledge. I'll try almonds to replace mac nuts... can I use pecans for cashews perhaps?

update: i've been enjoying the cheesecake. today i drizzled some extra agave on my slice to see if i needed to make it sweeter next time. and that was it! it was really excellent after i added the agave.

i just made this recipe yesterday! it was sooo exciting! i used cashews for the crust since i didn't have mac nuts and i added some extra dates. the crust came out really thick, so i think next time i can use about half of it. i used blueberries instead of raspberries because, well, i LOVE blueberries! i may have added a few extra dates to the sauce, but then today i added some agave to the sauce to sweeten it up. i used agave in the cheese instead of honey to make it vegan, but i don't think the agave made it as sweet as it should have been. the next time i'll use more agave and cut down on the water since agave is thinner than honey. i would also use less lemon juice next time unless i wanted a lemon cheesecake. but it's a great recipe and i was amazed at how much it looks and tastes like a cheesecake! even my mom gave it the thumbs up (with notes about too much lemon) and she's a real omnivore. i really can't believe it. yes, if you use all organic ingredients it does cost around $30-$35 to make. but i was encouraged because i had enough left to make another one except for the cashews. so it turned out to be a little more economical in the end. and i still have a lot of coconut and dates. i may use pine nuts next time instead of cashews. i wonder what other nuts can be used? and other nuts for the crust?

Chris S, it's non-vegan because of the honey. The honey was created by "animals", the bees in fact. Personally I'm a big fan of honey. It tastes incredible!!!

This cake is truly amazing.

I used macadamia nuts for the cheese (as I prefer them to cashew nuts) and used hemp oil instead of coconut oil (as I didn't have any coconut oil). Turned out just delicious!

I made this for my birthday on the ninth. It was delicious. Even non raw people loved it. I loved the lemony flavor of the cheese. Will definately make again.

Wow! This is what my husband termed a 'guiltless' dessert for those that don't want to try raw food and want 'good' food. We made it with strawberries instead of raspberries. Was wonderful. I would use less lemon less time and maybe throw in some finely chopped nuts into the crust to make a little crunchier. We also talked about possibly blending some berries into the 'cheese' mixture. Will comment when I do so. Thank you for posting this!

This is absolutely divine! I i mini version f it to take to my prom and I just tried some of the filling! Thanks you so much for adding it! PS I used an almond crust instead of mac nuts.

This was really good, tastes very close to "real" cheesecake, but it also costs close to $30 to make, yikes! I'd save it for special occasions.

i think i am in love! this is so good, and oh my good it tastes like cheese cake. i am taking it over to a cooked friends house for dessert tonight...i am trying to convince her to start experimenting with raw so she stops thinking i'm so weird. i think this might work

I tryed this and it tasted amazing. I had one piece and it was not enough, but the second piece was too much :) It is very rich, and very good!

This looks amazing I love cheesecake, I was raised vegan, and my mother did not use any animal or animal by products to my knowledge bees were not classified as animals or fish or chicken, maybe if raw food diet excludes honey, maybe I should think about discarding mushrooms that grow on the manure pile! Its just a thought, because I never thought honey was an animal by product until I came to this site, but hey you learn something new everyday!!

This picture looks amazing! I'd definitely make this if it were vegan...have you tried substituting agave for the honey?
