Recipe Directions

Blend carrots in food processor. Add sesame seeds, pecans, and kale. Blend. Form into balls and roll in ground hazelnuts. Freeze or refrigerate. Enjoy!

If you’re going on a road trip take these with fresh tomatoes, onion, lettuce, and homemade flat bread. Make into a sandwich\burger or eat as is.

I made these to take on a trip I’m going on tomorrow. They’re very plain so they would appeal to multiple tastes- the sauce will jazz them up- tahini or whatever you come up with.

Hi Mango Woman! On this one I didn't soak any of the seeds because it was a last mninute idea. You could soak and dehydrate or just add them soaked but yu may need to add some flaz to get them to stick together that way. I just had a little hazelnut meal left over so roll them in anything you like- flax seeds, almond meal, or even black sesame seeds would be cool. Usually with falafel I'd add onions, red pepper and ground garbanzo beans and cumin and garlic- The thing I like about these is that they are so basic they could go with any idea!

These are so wonderful and versatile!

We absolutely love these with 2 tablespoons Lemon Juice, 2 tablespoons Chia Seeds- ground, 1/4 Large Onion- chopped, and a bit of Sea Salt.

Oh, and we didn't have any ground Hazelnut, so we skipped the rolling part.

Thanks so much for posting this recipe! I'll have to try them as falafels- never have had any, so this would be a great project.:)
