Recipe Directions

1. Make noodles out of squash skin and pith, saving seeds for another dish.

2. Mix arame, chopped avocado and chopped onions in a bowl with “noodles.”

3. Make a sauce with next four ingredients and mix some or all to veggies (to taste).

4. Serve on a bed of lettuce. Sprinkle with sesame seeds and serve with orange wedges.

The second time I made it, I lowered the amount of nama shoyu too. I should ammend the recipe to 1 tbs.

Nama Shoyu is raw soy sauce. And I think that the picture portrays it very well.

I buy raw agave nectar. I don't think that dates would provide the same texture. Use seasalt if you don't eat nama shoyu.

I would use blended dates, agave is not raw, at all. Neither is nama shoyu

Yes, ACV is apple cider vinegar. I originally used 2 TBS of nama shoyu and ammended that to 1 TBS. Use as much or as little as you prefer. It IS good! Simple too. Enjoy.

I'm going to guess that ACV stands for apple cider vinegar. That would make it a more of a sweet and sour sauce. Looks good!

This looks so good! I remembered seeing this but didn't know what catagory it was under! They need a catagory for noodles or lo mein! I'm going to make this with sugar snap peas and jicima!

wow thats a lot of salt! Im gonna take it easy on the shoyu when I try this out. But it really does sound awesome!
