Recipe Directions

If you have a Vita-Mix, you are super lucky. I don´t, so this is what I did. Blend almonds and garlic until uniform. Add olive oil to blender and blend again. Add salt and water to the mix and blend yet again until a creamy soup forms. Serve garnished with grapes.

I LOVE LOVE LOVE grapes in this. Green or Red, but i´m partial to green. Enjoy!!!

hey, one question

since almonds aren't raw anymore here in north america, do you know of any other nut that would make a good substitute?

Hmm..I don´t know because the almonds really add the necessary well, almondy flavor. I would say that the best substitute would probably be cashews because of the creaminess. I totally forgot about the pasteurization thing now. Have you tried sourcing European almonds?

I just made this last night, but with 1 cup grapes and 1/2 cucumber as well. Also too much garlic, but delicious!
