I threw this together today, and was surprised by how much I loved it! Sometimes these mad-scientist moments do not produce desired results—not the case today ;) The sourness, sweetness, chompiness….All did it for me.

rinse the kale, massage it for a few minutes with water, soak it in the h20. add some Apple cider vinegar, swirl it around, ya know, play with your food..then drain. add lemon juice, squirt of agave, sprinkle of salt. Add the diced apple, corn off the cob, raisins… Enjoy chomping. Maybe use your hands some for the full tactile experience. Tee hee. What also might be good (just imagining variables: grapes, homemade cranberries (this could get to be a lot of work), dates pieces?) Hmm. I’ll leave it to you. Have fun.

This salad is so kick-ass, I am surprised there have been no comments on it. Ah yes, so must now comment on it myself:

I have made this salad like 6 times, and it is always a huge hit in my humble kitchen of one. It is very refreshing, not to mention the best thing on the planet.

Soaking kale...hmm. Well. You just let it sit in some type of substance. I soak it in water, with a bit of extra virgin olive oil. Then I massage it. Nice and limber.

I just made it and will enjoy it after yoga in an hour. It looks really good and smells great. I didn't really massage the kale though so maybe I will do that next time. I did soak it in vinegar and then rinse. I added cranberries and used honey instead of agave. Can't wait to eat it!
