CRUST

1. Process nuts and dates in food processor to a sticky consistency. Be careful not to over process and bring out too much oil from the nuts.

2. Press into the bottom of an 8” inch springform pan. Put in the fridge while making the filling.

FILLING

3. Process cashews, lime juice, honey, melted coconut oil, vanilla, and salt (if using) to a smooth and creamy consistency. It will need to process for up to 5-7 minutes, depending on the power of your food processor.

4. Pour the filling onto the crust. Remove any air bubbles by tapping the pan on the counter.

5. Freeze until firm for several hours or overnight. Can serve partially frozen to maintain firmness.

6. Garnish with fruit of choice. I used frozen raspberries slightly processed with a little agave to slightly sweeten.

I have not tried it with lemon juice yet. I like the idea of using the vanilla bean too. I use to "love" the old dairy cheesecake, so I was very happy to find a delectable recipe for raw cheesecake. It also keeps in the freezer for a long time. (=^_^=)

Question... how do I melt the coconut oil?? In the microwave or where? And for how long?

definitely not in the microwave. that would ruin it. you should probably never use your microwave again.

just set it in a pot of warm water for how ever long it takes to liquidize.

I made this for a company party and got a lot of compliments on it. I did the strawberry and agave with a little lime juice garnish in the shape of a christmas tree in the center (using a cookie cutter and then freezing). When the cake was cut and then thawed, it was just the right amount of garnish for each piece.

I made this in June and took pictures. I made a strawberry topping. It was killer and even the skeptical non-vegans thought it amazing

You can also use lemon juice in lieu of the lime juice with one vanilla bean for a variation (the more standard kind of raw cheesecake which is also yummy). I just made 3 cheesecakes with the lemon juice for friends yesterday (before I saw this). I will also try the lime juice for a key lime cheesecake. That sounds lovely! Thanks!

I bet there's a lot of nice variations to the raw cheesecake recipes. I'm always on the lookout for these :-)
