Recipe Directions

1. For the ‘rice’, you need to first blitz in the food processor or blender the buckwheat sprouts. Make sure they’re dry so that it turns into a chunky buckwheat flour. Put that into a bowl.

2. Then do the same with the cauliflower. Put that in the same bowl.

3. Now put the dates, vinegar, salt and soy sauce in the blender and try to blend it to a paste. Mine stayed quite chunky but it’s fine.

4. Add the date mixture to the buckwheat and cauliflower and mix well. It should be quite sticky. If not, add more vinegar or soy. That’s your rice.

5. Now for the tuna. This recipe is basically the tuna recipe created by James the raw. You blitz up the almonds till they’re quite fine. Then add the garlic (chopped), the nori shreds with lemon juice, salt, and cayenne.

6. Whizz it all up. You will probably have to use a spatula to get it all in and mixed around.

7. Now assembly. I’ve never rolled sushi before so this is just how I did it and can surely be done better. I first put the rice onto the large nori sheet and spread it over the whole sheet, not right to the edges though.

8. Then layer on the rocket salad and also the avocado. Add a dash of soy sauce also. Then splodge on the tuna.

9. Roll up the nori roll and dab the edges with soy sauce so that it sticks. Turn the big fat nori roll so that the edges are underneath and slice ‘bite size’ chunks with a sharp knife. I say bite size in quotes because they don’t fit into my mouth. It may be better to halve the nori sheet and spread the rice and tuna only half as thick. But, I’m just telling y’all how I did it. Anyway, they come out looking like California Rolls.

So this is my first recipe I’m posting here. It was also my first real try at raw vegan sushi.

Sure, I’d made some nori rolls but nothing serious. This turned out amazing!

The recipe is exactly how I made it but aside from the ‘rice,’ lots can be played around with.

I gotta say, the rice rocked. Had a great sweet vinegary taste and good consistency.

The whole thing rocked. The above serving happily feeds one hungry person or two if it is just lunch or if you have a side of something.

I had no ginger nor wasabi, but when I get some, this recipe will be perfect. Oh, and chopsticks.

I don't know actually, because the buckwheat gets quite sticky when you mix it with water, hence its almost like sticky rice. I don't know what else you could use...hmmm...

I am eating this right now and it is SO GOOD! I added more salt though, I'm a salt lover, and also green onion because I have a lot at hand. SOOO GOOOOD, Thank you!

Ciriac: This is my first time commenting on a recipe and "A Ma God!" Your "Tuna" for the rolls is out of this world! I've been 95% raw (went straight into it) for about 3 weeks now and have used several recipes from this site. Goneraw.com is my fav and I refer to it for every meal! Anyway, a few things I did different (cuz I didn't have them in the house) I used Ume Plum vinegar to replace the soy sauce in the sushi rice. I didn't see where you used your oil in the mixing instructions so I assumed it went into the rice and used Sesame oil instead. It was really good. Also, I took some butternut squash I had grated for my marinara sauce and let it soak in some of the plum vinegar I just mentioned along with some sea salt and honey. It made it a bit soft and pickled, simular to whatever it is they put in their vegan rolls at the restaurants. My love for sushi has killed my being a faithful vegetarian and 100% raw in the past so I can't tell you THANK YOU enough!

I believe "rocket" is the same thing as arugula. Thanks for this recipe!

PS I often use shredded carrot and beet as a "rice" filler in raw sushi, so that may work for those of you who don't have raw buckwheat--I can't get this locally either.

Turnip also works as rice.. It looks like it and you can chop it into little pellets. It also has a great taste.

Definitely you should try! I swear, it's so good. I did soak the almonds, yes. But then I left them to dry over a day or two.

Oh wow, that looks great! I think I will try it at the weekend when I can get some almonds. And brilliantly, I have a tonne of sprouted buckwheat which I didn't know what to do with. Do the nuts need to be soaked?
