Recipe Directions

1. To make the marinade, combine olive oil, garlic, agave, salt, Nama Shoyu, paprika, white pepper, chili flakes, and saffron in a bowl. Mix well with a spoon. Add curry then mix well.

2. For the veggies, mix all the rest of the ingredients in a bowl. Add the carrot juice.

3. Mix in the marinade and massage the veggies.

4. Place the veggies in a Teflex sheet and dehydrate for 20 mins at 105 F just to soften the veggies a bit.

5. Place drained noodles in a bowl. Take the veggies out of the dehydrator and mix it in the noodles. Mix until well incorporated.

6. Garnish with chopped green onions and cilantro. Serve with a slice of lemon. Squeeze a little lemon on the noodles and enjoy!

Note: I made a correction the Himalayan salt, not sure why it was 1 tablespoon! gah, too much salt - I changed it 1 teaspoon.

I've never heard of kelp noodles. What are these? Are they truly raw?

I found some today at life grocery store in Marietta, they were about 4 dollars for the package, but there are alot of noodles in the package. I'm going to make this with my peanut sauce from the site. Thanks all. By the way, I purchase saffron whole form from the famrers market and then put them in the grinder-saffron. I only pay 1 dollar for the saffron, isn't that cool!!!!

Say, is there a good substitute for saffron? It's a pretty expensive spice.

i am going to try to answer the best i can:

omshanti, chili lime dressing - no idea but i can do some research on it and see what I can come up with

ilikenuts, I would say replace soy with Himalayan salt or Kelp powder but you will have to taste - start out putting some then taste until to desired - I use Himalayan salt and Kelp powder a lot to substitute with soy sauce, sometimes the soy sauce can be pretty over powering if used a lot!

greenridge, here is a site with info on the kelp noodles: http://www.kelpnoodles.com/products_seatangle_noodles.html - it should answer your questions :-)

Hope that helps! all so interesting questions and curiosity! that's cool...:-)
