Recipe Directions

1. In a food processor, blend dates, cacao/carob, lucuma, maca, and honey (add goji berries too if using). A ball should form.

2. Add coconut and blend again. This will form little chunks.

3. Remove a tablespoon sized amount and roll into a ball.

4. Insert an almond in the center and seal the truffle around it.

Reminiscent of an Almond Joy, these truffles are a great pick-me-up and they take only 15 minutes to make!

Kids love to make (and eat) these too!

They are great to pack in a lunch or for traveling.

Easy peasy! ;0)

If you want to get more creative, you can use a cookie cutter to shape the balls into something else.

stRAWberry - I extrapolated on the coconut

jeshuabrown - I keep mine in the fridge and then when I want to use them I put them in a plastic bento container. They haven't melted on me yet...but I am in upstate NY so it isn't like I am 100+ degree weather. I haven't put them to that test yet ;0)
