Recipe Directions

1. Place the first 5 ingredients in a food processor and process. 

2. Add the next 6 ingredients (including the soak water) and process again until well combined.  Transfer mixture to a large bowl.

3. Add peeled and sliced sweet potato to the mixture and toss with hands until happy.

4. Let sit at room temperature for 5 hours and toss when you think about it. This will get the sweet potato nice and soft.

5. Place on teflex sheets. Sprinkle with extra coconut.

6. Dehydrate at 105 F for 2 1/2 hours, flip, and dehydrate for another 1 1/2 hours.

7. Remove from teflex sheets and dehydrate for another 7 hours.

8. Let sit in dehydrator until cool.

Hey Angie I think the pineappe is the second 5th ingredient to go into the FP and I really believe she is referring to the orange fleshed sweet potatoe... Correct me if I'm wrong Hemp33... :}

they don't get crispy like potato chips they are kind of chewy kind of like a caramel but these wont kill your teeth. Before I dehydrate them I like to take the extra Gooo and top each one before I sprinkle with coconut. Really gives them the candy factor:)

Hi Angie, I use the sweet potato with the orange flesh, sometimes they are called yams. I slice the pineapple about a 1/2 inch or so. I have a pineapple corer/slicer so it does it for me with no mess. Best darn thing I ever bought. you can find it on www.qvc.com anyone who eats a ton of pineapple should have one!

Hemp33, this sounds delish. I love yams! I was just wondering how cripy these get. I dehydrated some sweet potatoes (white ones) and I couldn't seem to get them crispy enough. I did 1/8" slices on mesh sheet so no turning was necessary. Anyways, can't wait to try this...after my MC is done.

So, when you say sweet potato, do you mean the one with white flesh, or the ones with orange flesh? They are called different things depending where people live... The recipe sounds fascinating! And how thick did you slice your pineapple?
