Recipe Directions

1.To make the patties, blend the tomatoes, shallots, garlic, salt, pepper, jalapeno, cumin, chili powder, paprika, lemon juice, and green onions in a food processor or blender.

2. Add one or two tablespoons of water if needed. Less water means a shorter dehydration time.

3. Add the walnuts and pulse the mixture several times. The nuts and herbs should only be processed/blended for a few seconds, so that they retain some crunchy texture. Taste the burger and adjust ingredients as needed.

4. Spoon the mixture into small patties on a Teflex sheet.

5. Dehydrate at 105 Fahrenheit on a Teflex sheet for 2 hours or until firm enough to flip.

6. Transfer mixture to mesh dehydrator sheets and dehydrate for an additional 4 hours or until desired texture is achieved.

7. Prepare the cashew curry sauce by blending the cashews, water, curry powder, and salt in a high speed blender or food processor.

8. Place the patty on a plate and add a generous portion of mixed leafy greens, zucchini noodles, chopped green onions, cilantro, parsley, and avocado slices.

9. Pour the cashew curry sauce over the greens and patty. Serve immediately.

I accidentally misread the instructions and threw some cashews in the burger mix...but it still turned out great. I loved this burger. Delicious!

okay i made this yesterday and forgot to add the tomato because i was making 3 dishes at the same time ooops ! but it came out like SAD fried tater tots .. mmmmmmmm

I have a quick question, are the nuts soaked first? I am horrendously allergic to Brazil nuts and think I will double the walnuts ...

I eat this every day now :D

I don't have as much chili in mine though because even the mildest of foods burn my tongue off!

I also dip it in some avocado and spinach dip to help with the spices :)

Carrie - I don't know how to sun dry the patties, but they can be eaten fresh. Simply use less water in the recipe. Then put them on a bed of lettuce and enjoy!

I'll be making these when i'm on vacation next week. I'm trying not to bring my dehydrator, but i've never sun dried anything. Can anyone recommend how to sun dry these? I obviously don't want bug's going into it.. any suggestions/hints? Or should i just take my dehydrator?

The nuts are soaked for four hours. Walnuts can easily replace the brazil nuts in this recipe.

Aziah - Cashews sound like a great addition to the burger. I'm glad you enjoyed it!

Ardesmond - I could see that they would taste like tater tots. I'll try this recipe without tomatoes and see what happens!

I fixed it... 0.4 cup walnuts was approximately 1/3 cup. The roughly blended nuts add excellent texture to this dish. The combination of walnuts and brazil nuts is outstanding! I served it with lettuce and tabouli. This recipe took me 3 minutes to make this morning. Then I popped it in the dehydrator, and it was ready for dinner! It's great to be greeted with this aroma when you walk in the door. Super easy and delicious.
