Recipe Directions

Place endive, cucumber, avocado and tomatoes in a bowl. Add freshly ground pepper, sea salt and vinegar or lemon juice. Toss gently…admire and enjoy!

I know the white basalmic vinegar isn’t raw, but it can be easily replaced with fresh lemon juice if you prefer. The quantities can also be modified to your tastes and increased to make enough to share. Enjoy!

I've never had an endive, what's it like?

Endive is an often overlooked vegetable! In it's whole state it's either white with yellow edges or white with red edges and shaped like an oblong cabbage with tightly packed leaves. They aren't really big, about 4 to 5 inches long and 3 inches at the widest part. They are commonly filled with a raw pate and served as appetizers - I'll post my favourite soon - but are also great just added to a green salad for variety. If you ask your grocer, they can point them out in the produce section.
