Recipe Directions

1. Place almonds, flax meal, shredded coconut, almond butter, and salt in a food processor. Pulse briefly for about 10 seconds.

2. In a warm dehydrator, ‘melt’ the coconut oil. Then stir the agave and vanilla into the oil. Add the coconut oil mixture to food processor and pulse until ingredients form a coarse paste.

3. Press mixture into an 8×8 inch glass baking dish. Chill in refrigerator for 1 hour until mixture hardens.

4. Remove from refrigerator, cut into bars, and serve.

Adapted to be raw from a recipe I found from Elana's Pantry.

It was mostly raw to begin with; actually, a lot of her recipes seem to be that way. Anyway, this recipe was so good I had to share it here!

The picture is from the original recipe, which calls for melted chocolate to be spread on top. I just leave the cocoa out of mine, but I’m sure you could stir in some nibs, if you wanted it chocolatey!

Also, the picture is of macadamia nut power bars, for which you simply substitute macadamia nuts for almonds and raw macadamia nut butter for almond butter. I haven’t done this but it was suggested on the original recipe. Enjoy!

Soak the nuts? I usually soak my almonds for 8-12 hours with a pinch of sea salt, and then I dehydrate them to make them crispy again.

Ditto, Frenchy! I found they don't stay together well unless eaten straight from the fridge. Even though I take my lunch in an insulated bag with an ice pack, the bar was still very crumbly by lunchtime. Tasty, but crumbly! :)

thats real good. i was making it in the vitmix. and i guess it got over heated (which has NEVER happened) andit was pretty much mxed but had chunks .. my mom and aunt loved it .. the only down side is that it doesnt stay hard itf its not keeped in the frig. tryig to find stuff that i can take to work or just keep in my bag in case i get hungry ...

Oh, flax meal is just finely ground flax seeds - I use an old coffee grinder to grind them up into a 'flour' (it takes about 1/3 cup whole seeds to make about 1/2 cup meal). Also, the 10 seconds in the dehydrator is just to 'melt' the coconut butter. You could just set it in the sun somewhere and it should liquidize pretty quickly. Good luck!
