Recipe Directions

1. I made my coconut milk by mixing about 1/2 cup shredded coconut and 2 cups water in the blender until smooth. Then I strained it.

2. After the milk is ready, all you have to do it throw everything except the cilantro in the blender and blend until smooth and warmed. Taste to adjust seasonings, since there is much variety in tomato flavor. You may have to add sweetener.

3. Serve topped with cilantro.

Since I posted this, I've discovered jicama juice via a recipe posted here. I like things pretty sweet, but I think you could make the coconut milk using jicama juice and get a pretty similar flavor. I am not a fan of stevia. I would make it with the jicama/coconut milk and then try it, it may be sweet enough for you.

I am happy you liked it, and that you found it, I'd forgotten this recipe. With the new site format, I don't see my own recipes in my profile anymore without a lot of looking. I am about to have a ton of tomatoes in my garden. i am going to try making it your way!

delicious!!

i used a young coconut for this.

i blended the water and meat together to make the milk

i also diced up some tomato and added some pumpkin seeds to the soup

we had mango salsa with jicima chips and this soup for dinner

midway through the meal i added a few spoonfuls of mango salsa to my thai tomato soup.... very good :)

anyone try substituting the sugar sweeteners with stevia or other similar sweetener? I avoid the usual sugars but would love to try this soup.

I am so making this soup, it looks absolutely fantastic - plus I'm desperate for recipes that don't require the use of a dehydrator or food processor because I don't have those yet, just a blender which does fine most of the time.

This is really nice. I added 1/4 tsp of powdered galangal (a thai spice that can be found at specialty or chinese markets) and upped the ginger a wee bit. The soup was reaaally light which I could see being awesome in the summer, but with winter's swift descent I think next time I might half the water when making the cocomilk for a thicker soup.

The soup overall sounds good, but I never thought of that to make coconut milk. You just made my life SOO much easier...thank you :)

Tomatoe season is about over here, I wonder how butternut squash or pumkin would add a different spin to the same recipe instead.

I made a carrot salad, dressed with ume vinegar, honey and walnut oil topped with sesame seeds and a side of pizza bread. I am sure there are other ways and better ways to make coconut milk, but I used what I had and it worked well.

I hope you all enjoy the soup as much as I do!

I have made many thai coconut soups, but I never thought to add tomatoes. How interesting!
