Slice eggplant into thick bread size, add veggies, smother top and bottom with cheddar sauce. My cheddar sauce thickened up in the fridge making it easy to spread and eat. Butter the outside of the "bread" with lemon slice and sprinkle with finely processed pumpkin seeds to make a toasty feel.

This recipe was inspired by gratefultobe who mentioned that she made a grilled cheese sandwich with tomato and basil. i just added the eggplant slices and extra veggies- still alive, not feeling woozy, don't have funny tummy, so i guess it is ok to eat eggplant raw as previously discussed. i'm sure you guys will have some great variations on this. i found one sandwich filling.

This looks AMAZING nevertheless. This is a BRILLIANT idea and am definately doing to start eating sandwiches this way with "eggplant" bread. I was such a mess with the whole rolled lettuce leaves thing and LOVE eggplant. Might try zucchini though...since there's not too much difference and I love it more. :)

I FORGOT TO INSERT THE RECIPE FOR THE CHEDDAR SAUCE. THANKS TO THE PERSON THAT CAME UP WITH THAT AND OR ADDED IT TO THIS SITE. GOOD STUFF.

1 cup raw cashews, sunflower seeds or almonds

½ large red bell pepper

¼ cup water

2 tablespoon lemon juice

2 tablespoon nutritional yeast

1 tablespoon tahini

1½ teaspoon sea salt

1 clove garlic

2 teaspoon onion powder (or a small slice of onion or 1 Tbsp of green onion)

Preparation:

Blend all ingredients until creamy. Add more water if it is too thick.
