Recipe Directions

1. Blend coconut meat in Vitamix until smooth. (You may want to make more than one or two of these.)

2. Pour evenly on teflex lined dehydrator sheet.

3. Dehydrate until dry, but pliable. (I added a pinch of salt to the coconut meat.)

4. Mix maple syrup, almond butter, cocoa, and salt until combined.

5. Spread onto coconut meat wrapper and roll up. Stick some banana or strawberries in there if you like. Eat!

I wanted to try out the young coconut wrappers I see in Matthew Kenney's new book, but didn't want to put a savory cashew filling inside.

I mixed up this fudge spread (would be great with a little chopped hazelnuts) and ended up with a sweet and salty thing going.

This reminds me of the nutella crepes you get in israel and Europe. Haven't had that in eons and have been feeling a little deprived. I cant wait to try this!! Thanks.

It's pretty sweet, but not as sweet as you may think. Coconut meat isn't too sweet, and the almond butter certainly cuts the sweet agave. Cocoa also counters it.

Everyone likes different sweetnesses, and it's was pretty good for me. I love the wrappers.

The coconut wrappers are in Everyday Raw. (Also Entertaining in the Raw.) I just made up the filling, as I was in a sweet not savory mood. Enjoy!

This overall sounds too sweet to me(tonight, it could change on my mood) but I love the idea of the coconut wrappers and now looking to get one to try it out since I have a new dehyrdator that needs to be used!
