Recipe Directions

1. Mix the base ingredients for the base in the food processor.

2. Then sweeten and flavor and knead a dough of the ingredients.

3. Put it in a cake shape and dehydrate for 3-4 hours.

4. Mix the ingredients for the filling and flavor to get a not too moist but "lumpy" dollop. It's also possible to make it without sweetener, but then more dates are needed. I used dehydrated strawberries because of their intensive taste, but of course, it's also possible to use fresh ones. The fruit-mass needs to be filtered.

5. Use a blender to mix the ingredients for the cream.

6. Put the filling on the base and then top it with the cream. Don't cover the whole surface, so that the filling can be seen.

7. Decorate with fresh strawberries.

This pie is originally made of apples, but here is the strawberry season, so I've tried it with strawberries and it works.

This looks divine. I would think strawberries and peaches would also be a nice combination. Just curious . . . what do you mean by "The fruit-mass needs to be filtered."?

The fruit filling produces some liquid, and it must be pored off, not to soak the pie base.

Great recipe - thanks.

Some points:

1 - I couldn't get strawberries so used blackberries.

2 - I have no dehydrator, but the weather in the UK this weekend was great, so I left the base in the sun!

3 - The cashew cream needed more liquid to go creamy. I added some coconut milk.

4 - I used unhulled hemp seeds. MY advice would be to use hulled, or grind the unhulled in a coffee grinder to get a better consistency.
