This was an experiment to try to replicate a Southern Indian curry found in 'The New Tastes of India' cookbook, & turned out amazingly well. We'll be making this one again.

Recipe Directions

In a food processor or blender, blend the coconut meat, cashews, spices and agave syrup, adding the water a little at a time, until a smooth sauce forms.

Stir this into the vegetables, and leave to marinade for a while. If you want it warmed through, leave it in your dehydrator, or an oven on it's lowest setting (make sure to not let it cook though!).

Made it yesterday, and if you like korma, you WILL love this...! I think you have successfully imitate the cook book :o)

It was too sweet for me though, hence I put a fresh chili with it.

Oh, yes, and if anyone using mustard seeds instead of powder, careful with the amount. I have put too much of it, I think and my curry tasted more like mustard sauce...lol

Sounds incredible. I cook mostly Indian food and it is hard to be raw due to missing it so much. I'm impressed that you added your spices together to make a curry rather than buying it in a bottle which normally doesn't taste like the real deal. If you have any more Indian recipes like this, please let me know!!
