Recipe Directions

1. Peel the zucchini if you don't want green hummus

2. Blend all in a blender or food processor.

3. Taste, add more lemon or cumin if necessary.

4. Serve with cut up veggies for dipping (I like cucumber, tomatoes especially, and lettuce leaves)

For me, this makes one serving if this is my whole meal. It could be shared between two if you're eating something else too.

It's way better than any of the high fat hummus recipes I've EVER made! And doesn't leave you wanting to lay day for a nap afterward!

I make this hummus all the time. Something that works really well is to grate the zucchini first and then let it sit in a colander. I do add some salt to help leach out the juice. I then squeeze out as much of the juice as I can to make a thicker hummus.

It is very tasty though, my mom who isn't raw or even vegetarian loves this! I made raw tabouli, carrot felafels and this hummus last night, we wrapped it in collard leaves, it was an excellent meal!

I liked this way more than expected! I'm a traditional hummus kind of gal and was skeptical because - what - no garlic??? I was pleasantly surprised it didn't need it and the texture was pretty good. My husband even liked it.
