Recipe Directions

1. Add all veggie salad ingredients to a bowl and mix well.

2. Add all curry sauce ingredients in blender and blend until smooth.

3. Mix the two together only when ready to serve.

I left out the agave and added the coconut to the sauce and it worked really well.

SO good! Possibly the best curry I've ever had. The creaminess of the cashews is beautiful in this dish. I had mine with broccoli, green beens, carrots, and some sweet bell peppers.

scrumptious - I used your recipe as inspiraton: in my curry sauce i added a teaspoon of cumin and used dates instead of agave; i made the veges with some added finely minced red onion and red bell pepper and dehydrated them in an unsealed ziplock - to help soften, warm, and remove liquids, and used about 3 T lime juice {btw peas are one of the only frozen veges that are fresh flash frozen (maybe some corns)}, i also made the indian crepes, and the indian sweet sauce from this site as well ... bon appetite

Quite a lot of frozen veg has been blanched before freezing so not raw. Unless you check directly with the producers, I don't think you'd know.

This recipe sound delicious, I'll definitely will try it. I've been craving indian for a while now. I just wondering though, if frozen veggies are really raw. I'm afraid they've been coocked before frozen. Does anybody have more info on this?

Wow! This was delicious! The sauce is just amazing.

I was worried about eating a crunchy vegetable curry but it worked just fine. Especially great for those Californian hot evenings!

I subbed the cashew flour for one cup of raw whole cashews and about 1/2 cup of raw almond butter. I threw all the sauce ingredients into the food processor and it came out just perfect.

Glad you and the family enjoyed it! It's hard to get kids to eat raw sometimes, so that's wonderful news that they were into it. Family dinners are so important. The recipe is good, but it's you're love that makes it great :) *Peace, Love, and Living Foods*

Incredible is right!! I just made this for my family and they gobbled it all up (even licking the bowl to get the very last drop). This recipe was so easy I was able to have dinner ready in 15 minutes, just like you said; which was good because I was running behind and was worried I wouldn't have dinner ready in time. Since going RAW, I have been looking for a good Indian food recipe and now I've found it!
