1. In a food processor or blender, combine the dates and water and blend/process until you get date paste.

2. Add avocado and process until smooth.

3. Add mango and process until smooth.

4. Put in an ice cream maker and follow the manufacturer's directions.

Raw vegan ice cream is amazingly delicious, but it's hard to find a raw one that doesn't freeze solid when put in the freezer.

One of the many great things about this ice cream is that it remains creamy and not overly frozen, even after being in the freezer for a couple of days; just like real ice cream!

Note: This ain't no sorbet, this is a seriously creamy ice cream.

I used dates, but since mango is quite naturally sweet, I don't think you need them. If you want the filler, you could swap them for another fruit, like strawberries or banana or even an extra mango!

If you don't have an ice cream maker, you could try just putting it in the freezer. I only used the ice cream maker for half the required time, so it was still pretty soft when I put it in the freezer, and it turned out great!

kurite - since the mangoes are quite sweet, you can just cut out the dates altogether! Taste the mix before you freeze it and if you feel that you'd like it sweeter, just add in a bit of honey at a time to taste.

I dont have dates in the house. I know its not Vegan but do you know about how much honey I would need to use in place of the dates?

I made this without the ice cream maker, and it froze solid. I even tried stirring it several times during the freezing process. It might make a nice granita, or maybe I'll trying using the hand blender with mango that is already frozen. And serve it right away. Also, the avocado made it quite green.

the avocado makes it hella creamy, the dates just make it sweeter. if you made it with dates, mango and water, sans avo, then you'd have sorbet

I love this recipe WITHOUT avocado.. why do you need avvo in it? I personally like my fruit EXTREMELY sweet, so I thought avocado would give it a bit of a salty flavor.. am I wrong?
