Recipe Directions

1. Wash asparagus and trim ends. Using a vegetable peeler, peel the stems of the asparagus spears – starting under the bract. Save the bracts (tops) and set aside. Thinly slice radishes.

2. To make the vinaigrette, blend all ingredients in a blender. Store in an air-tight jar.

3. To assemble, in a large bowl, toss shaved asparagus, sliced radishes, coarse pepper, sea salt and vinaigrette.

4. Plate salad and garnish with asparagus bracts and orange zest.

I am just eating this now, as I have a garden full of radishes & a bunch of asparagus in the fridge! I added a handful of baby spinach leaves as I found it wasn't quite big enough for lunch for me. The dressing is awesome too - I'm glad the recipe made enough for 4 servings (or more!), looking forward to using it during the week
