2 cups cashews

3/4 cup water

1 tablespoon lemon juice

1 teaspoon sea salt (or slightly less)

1/3 cup nutritional yeast

 

Optional: 2 to 3 more tablespoons water if needed to facilitate blending

Directions

1. Throw all ingredients in a high-speed blender.

2. Blend. This recipe can be a bit of a @#$#$% when blending, so if you're having trouble getting the mixture to mix properly, turn your high-speed blender off and insert a spatula down one side to let a pocket of air down near the blades. Then remove the spatula, put the lid back on and continue blending--going from slow all the way up to fast again. You can also add a bit more water (mentioned above) but I try not to add any more water than three additional tablespoons because I like to keep the texture nice and thick.

3. Serve with noodles . For noodles, you all know that I am obsessed with kelp noodles, so that's what I use for my raw macaroni and cheese extravaganzas. But if you're cheap and/or disorganized and don't have raw kelp noodles, you can make zucchini noodles using a carrot peeler.

4. Garnish with lots of pepper! Normally, I don't really like pepper, but this recipe just totally gets better when you sprinkle a lot of pepper on it. Don't ask me why. It just does. Oh! And you could also even serve with raw ketchup :)

Enjoy this raw macaroni and cheese recipe! I don't have children, but something tells me they would just love this raw recipe as a treat on a cold, wintry day.

Raw macaroni and cheese... This recipe was born out of me saying to myself, "I need some raw macaroni and cheese right now or I am going to scream!" So I busted out my Vitamix and a sac of cashews and got to work creating this simple but ooeeey, gooey cheesey recipe.

Beware: this raw macaroni and cheese sauce is very potent! Start with a tiny bit of sauce and mix it into your noodles and then add more as your tastebuds dictate. If you add too much this raw mac and cheese recipe can be overpowering and way too saucy. So start slow with the sauce!

You can use this photo as a guide. See how the noodles aren't swimming in sauce, they are just lightly coated? That's what you want to start with when it comes to this raw macaroni and cheese.

OK, and due to my noodles it's not really a raw macaroni and cheese recipe, it's more like spaghetti and cheese, but the taste is what's important, right??!

Everybody, Cameron is the name of my spouse. And he even loves this!!! He never leaves comments here, so the fact that he wrote the above is testament to how good this recipe is. :)

I have only tried kelp noodles once and I hated them. I don't know if I did something wrong, or bought the wrong kind or what, but I had one bite and had to throw the rest out. I followed the directions, and soaked them but they were awful. I did have them plain though, perhaps that was the problem?

Yes, you shouldn't eat kelp noodles plain!! They are just boring. The whole reason we have noodles is to coat them with sauce :)

should the cashews be soaked beforehand, or does it not matter?

It is not absolutely necessary to soak first, but it is a good idea and it will be easier to blend if you soak the cashews for an hour or so and then rinse them and then make the recipe.

(I have made this without soaking though and it will work, but isn't the easiest to blend.)

That was kind of a weird response that I gave above about soaking. I make this in my Vitamix all the time and I never soak. You only really need to soak (to soften the nuts) if your blender is crappy.

I am going to make this recipe this week and was wondering how long the "cheese" keeps (since it is just me in the house).

* And the kelp noodles are amazing. I use them a lot instead of zucchini. It's nice to switch things up from time to time.

1. This recipe keeps very well! Definitely a few days+ and it does not lose any of its goodness nor does it get gross or anything. Be sure to keep it tightly sealed.
2. You are also lucky because you get to eat this all by yourself!!!! :)

This recipe will definitely make a few meals for you 3 or 4 meals, I'd say. I have eaten a whole batch of this on its own over a couple of days, so no worries re: portions for one.

Oh my lands! I just got my shipment of kelp noodles in the mail yesterday, so I was excited to try this. It is wonderful! I was surprised that my hubby and teenage daughter wanted to taste it, too. They both loved it! I am so glad I found your site. Your recipes are some of my favorites. Simple, few ingredients, and many are instant gratification! I am quite addicted to kelp noodles. I order them by the case load. :) Once basil starts coming in season and you can get it cheaper, buy loads of fresh basil and make pesto and serve with kelp noodles (if you'll still have any left, that is!!) :) Yum.

I made this for dinner (kelp noodles for me, cooked macaroni for my bf), and it was awesome! I ate so much that I'm sick to my stomach! I think the nuts absorbed the water from the cooked noodles, because bf's sauce looked like clotted cream. Mine was amazing. The kelp noodles don't absorb the sauce, and don't much flavor on their own, so they taste like pure cheezy sauce. Yum! I like the recipe so much I posted it on my facebook!

I’m so so glad I found your website! I’m new to the rawtarian lifestyle and I’m very picky with fruits n veg but I want to eat healthy n lose some weight. Another fabulous recipe! I made this for lunch today, and it was brilliant. I was surprised by how much the sauce tasted sort of swiss cheese-ish. Delicious! And warm from the Vitamix...ahhhh. I added a sprinkle of garlic powder on top, and it was terrific.

FYI, I used zucchini noodles. I spiralized four small-to-medium zucchini and I still have a ton of sauce left over. Yay!

Mine tastes like macaroni and cashews. I'm trying to figure out what I did wrong. How cheesey is nutritional yeast supposed to taste because mine doesn't really taste very cheesy.....hmmmm

I wouldn't say that it tastes TOTALLY like cheese, but there is definitely a hint. It is kind of more like a white cheddar or swiss flavor than cheddar flavor.

Next time try adding more nutritional yeast to taste.

This recipe is absoultely amazing and I'm in heaven. I soaked my cashews for an hour or so before and it blended up very easily in my non-vitamix, and I just did some peeler zucchini noodles. Super easy for a newbie. My belly is nicely full and I'm so happy! Thanks!

Do kelp noodles taste most like macaroni? I would think they would taste more "kelpy" as in seaweedy? I'm trying to please kids here. They have no patience for acquired tastes. Any good ideas?

Good question! No, kelp noodles do NOT taste seaweedy or fishy at all. They are VERY bland - they have almost no flavor.

Of course, some other types of seawood, like dulse, do taste very"fishy"

OKAY!!!!!!! !!!! AND MORE!!!!! I tried this for the first time last night. I added the pepper like you said (delicious btw) also added fresh green onion. After taking one bite I exclaimed: OH MY GOD A RECIPE THAT ACTUALLY TASTES LIKE THE NAME.

Made this for dinner tonight. Yummy! I really like your recipes! Tried the kelp noodles as well for the first time today, different texture, but after a while I didn't even notice. The sauce in this recipe reminds me of my mom's homemade mac n cheese with white cheddar, just milder. :)

I have heard that nutritional yeast isn't good for you because it has natural MSG in it. Do you know anything about this?
