1 1/2 cups cashews
3/4 cup water
1 tablespoon fresh lemon juice
3/4 teaspoon turmeric
1 1/2 cloves garlic
3/4 teaspoon celtic sea salt
3 celery stalks - finely chopped (reserve!)
3/4 of a fresh red bell pepper - finely chopped (reserve!)
sprinkle pepper (reserve!)
sprinkle paprika (reserve!)
Directions
1. Add everything (except celery, red pepper, pepper, and paprika) into a high-speed blender. Blend very well until it resembles a smooth, creamy hollondaise sauce! (Note: if you don't own a super powerful blender try soaking the cashews for a few hours first to help soften them.)
2. Pour yellow "egg salad" liquid mixture into a large bowl. Add chopped celery, chopped red pepper and anything else you'd like to add, like chopped parsley or chopped white onion, too.
3. Mix everything together with a spoon until nicely coated, like in pictures. Sprinkle with pepper and paprika. Your raw egg salad recipe is now ready to eat!
4. Serve on romaine lettuce wraps for an raw egg salad sandwich experience. How do you like to enjoy this raw egg salad recipe?

Raw egg salad recipes - It's surprising that raw egg salad recipes have eluded me for almost two years. Believe it or not, I've never made a raw egg salad recipe before!
To my pleasant surprise, this raw egg salad recipe is, um, totally ridiculously incredible. It actually reminds me of egg salad! I have made a few sort of similar recipes in the past, but nothing that screamed "This tastes like egg salad!!" quite like this raw egg salad recipe.
This is quite a fatty, heavy-tasting recipe, so you'll want to ensure that you're serving it with lots of nice fresh veggies, especially romaine lettuce. Yum!

Just made &WOW!!! This is the recipe I've been waiting for...so good & not tofu. I am not exactly raw (see tofu comment!) But trying to up my %of raw intake. Now I am really looking forward to trying the other recipes on this site. The egg salad peaked my interest, but mainly because I needed something to make monkey sandwiches with!! So been dying to know y u call them monkey sandwiches...did I just miss that part of the post?? Thanks so much for sharing & helping us all in our journey to healthier bodies!!

Monkey sandwiches cause I envision monkeys holding cukes and eating them like we eat sandwiches :) But also cause I think that my husband said something about eating monkey sandwiches at a raw restaurant that he visited without me. I can't remember if that was what he meant, but this is how my brain connected the dots :)

I will make this tomorrow. I'm not raw, but am a vegan who eats mostly raw foods. The only vegetarian food I miss is eggs and have been wanting to find a sub. Even if it doesn't taste like eggs, cashews are my fav nut, so it should be yummy. My mouth is watering so much it might be hard to sleep tonight. ;)

I read about a black salt that you can sometimes find at indian groceries. It is black because it is sulphered so it has an eggy taste if you add a small bit, if anyone tries this please report back on your experience. It is not the same thing as smoked salt.

I use the sulfer salt, and yes, it does give an eggy taste to stuff. Don't use too much, it is very strong!

Try the melt in your mouth breakfast sandwich recipe I found @ nomeatmarch.com - highly recommend more by silken firm tofu...the spice mixture &this tofu make it feel & taste like an egg...especially if you've been without for a while :0)

Oh My GOD!! This is AMAZING!! I made it on a whim since we are going to a BBQ tomorrow and I was bored but I am sooo glad I did! It is perfect! I did a bit a tweaking to meet my taste preference but Laura-Jane, you did it again! Everyone Should go out and make it right now!!
If you soak some extra cashews for a really really long time (24 hours) you can do a rough chop and throw them in for something that feels like egg whites!

This egg salad recipe was fantastic. I love how all of your recipes are so easy to follow and quick to make. This recipe took maybe 10 minutes! It probably wouldve taken less time but I threw in some chopped avocado. For some reason I think that avocado(by itself) taste just like the yolk in a boiled egg... So strange.
So it made this recipe perfect for me.

Try adding chopped young coconut meat-- it's texture is VERY similar to hard-boiled egg white.

Are you familiar with black salt? It has a really strong sulphurous (i.e. eggy) smell. It would definitely give your dish a more egg-like flavour. (Despite the quite potent smell, it is very good, especially on avocadoes)

Oh…my…gosh. Just made this and I’m astounded by how much it tastes like egg salad (or at least what I remember egg salad tasting like…I’ve been vegan for quite awhile). I wrapped it in collard leaves, and it was so delicious I nearly polished off the whole recipe. You are a GENIUS. Thank you!

You can find Kala Namak (Black Salt) at Indian grocery stores or Amazon.com Not sure how it ever got the name "Black Salt" as it is an odd pink color rather than black.

Not sure if this will help with research, but I found this description of this salt:
"Kala Namak
Kala Namak is also known as Indian Black Salt. It has an unforgettable smell, similar to egg yolks. It is used extensively in Indian cuisine. This salt has become popular with vegan chefs for adding natural egg flavor to their dishes. Pink with a powdery texture."
Be careful, though, because there is also a salt called Black Salt from Hawaii, and that's not the same thing. :)

I'm used to cooking TV dinners(the vegan friendly ones, not the chemical/mystery ingredient ones, and not the (somewhat)healthier ones with meat) but lately, after reading studies about items that are in 99% of the food in stores... Looking at the ingredients in prepared foods, seeing the 50+ ingredients, thinking about what some of the items are/might be made of(such as pink slime, gelatin, and red dye) makes grocery shopping more of a nightmare for me than making food from scratch.
The reason I'm writing this comment, is... On the ingredient list, where it says "fresh red pepper" would that be a red bell pepper, or the seasoning?
By the way, since I'm new to making food from scratch, and don't have easy access to anywhere that offers classes to help people make vegan friendly food, this website makes looking at recipes(and following recipes) a lot less daunting. I'm glad I found your site, and I'm looking forward to making some of the dishes on here! :)

being a southern gal it needs just a dash of dried mustard,adds color and that southern spiceness good recipe,tks im raw and love to cook haha the cooking is the best part next to e3atting all this yummy food and not halving to watch diet,,,lol

Omg! This is soooooo delicious! I made half the recipe because in the past I've wasted expensive ingredients on recipes that seriously bombed..but now I wish I made double! I added green onions and finely chopped zucchini, and a little stevia to give it a "relish" taste..ate it on a leaf of romaine lettuce...omg good! This is such a keeper!

Good question! It means "do not lump this together with the other stuff " or "set aside" :) It's a warning to stop you from dumping the "reserve" stuff into the other mixture too early. Hope that makes sense!
