1/2 cup of sesame seeds (or any other nuts you have on hand)
1/2 cup pumpkin seeds (or any other nuts you have on hand)
1/2 cup of medjool dates (or other dates)
1/8 teaspoon sea salt
4 tablespoons raw cocoa powder
Directions
1. Process the nuts in the food processor. Keep processing them until you can't see the nuts anymore, but stop processing before they get too soft looking.
2. Add the dates, seasalt and carob powder. Process again until everything is well mixed and clumped together.
3. Roll the balls in your hand and form balls. Some people like to roll completed truffles in goji berries, cocunut, cocoa powder, etc., but I prefer mine simple.
As Raw Rose suggests, these are also delicious if you crumble a truffle or two on top of sliced bananas or other chopped fresh fruit.

Raw chocolate truffles were the very first raw food that made me certain that I could become a raw vegan for an extended period of time.
This recipe just requires a food processor and a few ingredients.
You can make these in a blender, but it won't blend properly and the truffles won't be as smooth as they should be. These should be made in a food processor.

Thanks for your comment, Amanda! I used to be addicted to this raw truffle recipe. I don't make it as often anymore, but it's comforting to know that I could whip up a batch of these raw truffles in about five minutes if I ever need a sugar fix. :)

Copacker sought
Hi,
I represent a raw vegan chocolate company in NY. We are in a few whole food regions and sell thousands of bars. We do Tempered chocolates, truffles etc, and are looking for an automated copacker to manufacture 6 to 12 of our products. Cert organic is needed and kosher is a plus. Does anyone know of a copacker for truffles? Our products are vegan.

Made these for after dinner. I used pecans, sunflower seeds and raw cacao. Very good! My son, who is super picky, even liked them. If he had known there was nuts and seeds in them he wouldn't have tried it. This is a yummy treat I can feel good about giving to my kids.

I made these tonight and am addicted. I used half a cup combined of shaved almonds and salted cashews, added 7 dates , blended in the food processor and rolled into cocunut... cost me 2.50 to make it!

Wow - these are tasty! I used sunflower seeds and cashews. I did not have powder so I used raw cacao nibs. Result - choco chip truffles! I did have to add just a couple drops of water to be able to shape, may not have processed the nuts enough?? Great recipe!

I agree that it may be that you didn't process enough. I am impressed that you used cacao nibs. I am way too over-protective of cacao nibs - I am too cheap to use them for anything lol

No, sorry, you cannot substitute agave nectar for dates in this recipe.
You can try substituting prunes, raisins or dried (but moist) apricots though.

these turned out great! Made then for my yoga class and can't wait to share them. Looking forward to playing with other ingredients--maybe some maca and mesquite, nibs and gojis. These will definitely be a regular thing. I ended up not having enough dates (having snacked on a few ahead of time) so I added just a dollop of coconut oil and some coconut crystals. Made them a bit more decadent but still very delicious. Thanks for the great recipes!

I got a similar recipe from a "raw" friend. It uses raw cashews, raw cacao nibs, both ground, and agave nectar. Rolled in raw cacao powder, put in the fridge for a couple of hours.... to DIE for!

I tried make these to balls but it is too powdery to handle. I use organic coco power instead of raw. Could it be a reason why?
Still taste great with powder though.

hi Larry, it is not necessary to soak unless I specifically state that they should be soaked. So assume no soaking unless you read otherwise in the recipe

Hi from France!
I've just made your chocolate truffles and they are DELICIOUS! I used cashew and almonds, mixed with half prunes, half dried figs plus some cocoa powder. Finally I sprinkled them with coco powder, the yummiest treat ever!
They actually taste like the french truffes we have at Christmas, but so much healthier!! Thanks for the recipe :)
