3 cups walnuts (soak for at least half an hour to soften - rinse and discard water)

1/4 cup raw soy sauce (nama shoyu)

1/2 to 3/4 cup onion

2 medium-sized carrots

2 celery stalks

A pinch of salt

Directions

1. Throw everything in a food processor (except the soy sauce). (Of course, make sure you soak and rinse your walnuts first. Soaking your walnuts is to soften them. Rinsing your walnuts removes the enzyme inhibitors and will make your raw vegetable cream cheese taste better.)

2. Process the raw vegetable cream cheese in your food processor until it become a smooth, cream-cheese-like consistency.

3. Add the soy sauce near the end and then process again. The reason you are adding the soy sauce last is because if you add it at the beginning it might splash all over the place while the walnuts are flying around inside. Best to wait until it's smoother before adding the soy sauce to your raw veggie cream cheese recipe.

4. Serve this vegetable-flavoured raw cream cheese on cucumber rounds. The flavour of the cucumber and the raw cream cheese recipe go together in a heavenly way. Don't know what a cucumber round is? It's easy to figure out! Slice an English cucumber into chunky rounds that resemble crackers. Spread the raw cream cheese recipe on top. Tadah!

The cucumber combination also makes a perfect appetizer, but I prefer to have a huge plate of cucumber cracker rounds for dinner!

PS: The soy sauce gives this raw vegetable cream cheese recipe its taste so do not attempt to make this recipe without the soy sauce.

I am new to raw. I will definitely be trying all of your recipes. I notice many of your recipes have nuts. I have a substantial amount of weight to lose. Should I limit my amount of nuts? I have only been (mostly) raw for a week and have already lost 6 pounds! Yay, me!!! Oh, I also entered your contest for the dehydrator!
This cream cheese spread sounds sooo good! Will try it in the next day or so. Is Bragg's okay instead of nama shoyu? Oh, and I do not have a food processor. I do have a vitamix, so I hope it will work. I will let you know.

Well, I think nut-based foods are very important in terms of staying raw. I think that at this stage of your journey you need as many helping hands as possible in order to stay raw. For example, delicious recipes involving nuts!

My general rule is that you can eat AS MUCH OF ANY RAW FOODS AS POSSIBLE if you are 100% raw. Try to incorporate a green smoothie and lots of fruit and veg during the day.

Stay focused on staying raw, and the weight loss will follow.

I have never made this recipe in a Vitamix. I think it's going to be more of a hassle than it would be in a food processor. Try to get a food processor, you can get one at your local store (WalMart, Zellers, whatever) for around $50. Totally worth it. If you do try it in your VM, let us know if it works?!?!!

Also, I think if you can make it 100% raw for a month, that should be your goal. The whole point of raw foods is to change your eating habits over the LONG TERM. So eating lots of nuts is fine for now. Stick to raw fruits, veg, nuts and seeds for the first month or even six months. Don't worry about how much you eat! Over time your pallette (can never spell that word) will change over time and you will start to crave fresh veggies. I know it sounds crazy but it's true!

Thanks! Actually, I am already craving good things over the (well...not so good!). I am having my green smoothie every morning for breakfast, with fruit and maca powder and chia seeds, too. SO YUMMY! It keeps me full until well into the afternoon. I try to have a salad for lunch, and a little heartier dinner. I am also experimenting with desserts that don't require a dehydrator. I know I need a food processor, too, but it is all so expensive getting started, and all. I have a big wish list. Thanks for responding!

As an alternative to raw soy sauce I usually recommend Bragg's Liquid Amino, which you can usually find at your local HFS (health food store). But although Bragg's is wheat-free, it's not soy free so that won't work for you!

Hmmm... You've stumped me! Does anyone have any soy-free suggestions for Alasia?

hi! you can substitute soy for coconut aminos! I buy mine at my local health food store and it works great :)

I think I'm going to try with Coconut Aminos by Coconut Secret. But I've read articles that say that soy sauce, nama shoyu, Bragg's Liquid Aminos, and even possibly coconut aminos contains MSG. Anyone know any more information about this?

Also, do you think I can do this with a blender? I ordered my Blendtec last week and I don't have a food processor yet.

i can't speak for any other product, but the coconut secret's coconut aminos says right on their website "The coconut amino product is 100% free of MSG or any undesirable additives…just coconut sap and mineral-rich sea salt!" i found this info here: http://wedharma.com/health-environment/coconut-secret/ and i never knew that braggs had a hidden form of msg up till now, just another reason for me to make the full switch to coconut aminos i guess :) hope that helps!

I just made this and my 2 year old went nuts for it! I served it with an english cuke as she loved it. It was our lunch and there is plenty more saved in the fridge for later. I think I might try this as a sandwhich spread with some sprouts and avocado. Mmmmm. Thanks

So, so good! I've made this recipe 3 times already since I saw it last week. I used my HealthMaster blender, and with the tamper it succeeded in having a great cream-cheesey consistency without needing to add any liquid. I also experimented with doubling the celery and carrot portions, and it worked nicely. I used Braggs Liquid Aminos instead of raw soy sauce. My mom says this reminds her of chopped liver (something about the flavor and texture), which she loved before we went raw!

Lol, yes, my own mother didn't eat chopped liver, but she loved liverworst and I have had that when I was a kid and I could see how the comparison works. :)

This recipe is salty, though. Do you find it too salty? My husband thinks I am going to die of a heart attack because I think I eat too much salt, but I just seem to crave a lot of salt. I am genuinely curious to know if you think it's too salty, or if you've been reducing the salt or anything.

all these recipes look so good! i want to eventually go all or mostly raw, but a lot of these yummy recipes call for walnuts and cashews. can i substitute them for almonds, since almonds are the only nuts i can eat?

This is one of my favorite receipes I make it all the time. I put it on my veggie burgers that I dehydrate and slice of tom. Matter of fact Im eating now for lunch. I also love it on cukes and I stuff little mini sweet peppers with it and eat several, its wonderful. Thanks for this wonderful website, I am new to raw and you have the best receipes.

I must say, this website has opened up so many new and cool options for me! (There's just so much you can do with the same ol' salad and bananas! lol).

sidenote: I made this Vegetable Cream Cheese Recipe, but I didn't have "all" the ingredients, so I did like MacGyver and improvised:

Substituted Almonds for Walnuts, and then added a little Almond Milk.. (Don't ask me why?!?..)

Then silly me grabbed the Worcestershire instead of the Soy Sauce, and you know what?!... It wasn't half bad.

But I'm going to go to the store and get the "actual" ingredients and do it right!

Wow! I made this with pecans, and I could not stop eating it! Absolutely fantastic! I'm going to make it for a party full of meat - eaters this weekend and not even tell them it's raw...my guess is, they will never know ;)

This recipe freezes beautifully. I froze a container months ago and forgot about it. Thawed in fridge and it tastes a good as fresh!! (I filled the container so there was as little air as possible, and froze immediately after processing). This is a really tasty pate.

Tried it! This recipe was perfect. I had no idea what to make for dinner, so I did an internet search for "easy raw dinner" and found your website. Everything looked awesome, so I poked around until I found something that I had ingredients for (or close). Didn't have celery and only used half the nuts (added some hemp seed), and there was a higher volume of veggies involved. The results were fabulous. We prepared this in about 1/2 hour and served with vegetables on the side for dipping. Best of all, my kids really loved it (which is a HUGE deal) and asked for seconds, leaving all plates clean. Not only that, but they both asked if we could have it again soon (rare). We'll definitely be trying more of your recipes! Thanks for this wonderful resource!
