This is my go-to meal to take with me to work for lunch when I am in a rush. I know it sounds like it's very boring and not really a "recipe," but this meal is a big part of my life so I feel like it's my duty to share! No equipment required. Ingredients: carrots, avocado, and tomato.

  • 1. Chop your carrot and tomato into nice, small bite-sized pieces and place in a large bowl.
  • 2. Cut the avocado in half. Get rid of the avocado pit. (Make sure the avocado pit doesn't fly across the lunchroom!) Then cut your avocado halves in half again. Then you can kinda spread the avocado peel out and dump the avocado "meat" into your bowl using your fingers. Then, chop the avocado "meat" into little chunks.
  • 3. Softly stir up all three ingredients a bit. See how the avocado (and tomato seeds/juice) kind of spread over everything and create a "dressing" in a way?
  • 4. Sprinkle with a bit of salt and pepper and eat immediately. This salad seriously doesn't need anything other than those ingredients--not even any dressing! It's really tasty on its own like this.

Since I am renowned for my simple, satisfying recipes I feel negligent for not having shared this with you earlier. But better late than never, right?

This is my go-to meal to take with me to work for lunch when I am in a rush. I know it sounds like it's very boring and not really a "recipe," but this meal is a big part of my life so I feel like it's my duty to share it with you!

Warning: Do not make this raw salad in advance! It'll get all smooshy and yucky if you do that. Instead, just grab a large carrot, a nice tomato and a fresh, perfectly ripe avocado and take them with you to work. Then, in your lunchroom or work kitchen just grab a knife and prepare while you're there. It's super fast to make and surprisingly tasty! Seriously.

Obviously, this is a perfectly fine meal to eat at home too, but I never really eat it at home because when I'm at home I'll make something a bit more exciting, like one of these recipes. :)

I know this sounds boring but trust me. It's a very nice flavor combo -- as long as your avocado is perfect and not overripe or under-ripe.

And there you have it, my secret raw lunch idea that I actually eat all the time, like, at least twice a week! (PS: I usually eat two oranges for dessert after lunch.)

Hi Lori,

Well, there aren't many ingredients in this recipe so it will be a bit wonky without them... since the avocado acts like the dressing... So I would say some salad dressing would be a good sub :)

Loved it! I used a mandolin to slice the carrot. I also added Spanish red pepper and red onion to the recipe and a teaspoon of lemon juice. I served it on a bed of romain salad. It was delish!

Yum! Made this for lunch at work yesterday and added some chick peas I had on hand. Sooo good! Making it again today. I felt like such a wierdo vegan bringing my own vegetable peeler to work and going at a giant carrot in our lunch room. But it was worth it! :)

I tried this today but added raw sweet onions and raw zucchini. I was at the store and had forgotten the recipe and couldn't remember. Anyways it's so good. I didn't think I'd like avacado and you're right. It seems like there's dressing on the salad. Thanks.

My family is far from vegan and very picky! I made this tonight as a side dish. My stepdad who doesn't like avocado actually enjoyed this! Everyone thought it need some onion but I'm just glad it was well liked. Thanks for the recipe!

This is really good! It's all ingredients I would eat as part of a sald (with lettuce), but never thought of just eating it on it's own. I've made this for myself twice in 3 days. It's simple and delicious. Quick easy light meal. I'm eating this now as I write! :^)

The avocado is integral, but perhaps you are unable to get in India. Is that so?

Avocados are quite expensive here too - usually around $1.50 per avocado in Canadian dollars

I am glad that you liked it Shanay! It is very very easy, isn't it? I eat it twice a week when I have to go into the office to work. It's so quick to prepare in the mornings, I just grab the avo, tom and peel a carrot or two and I am ready to go! then I chop at work.

Love it! Avocados practically create their own dressing, don't they? I like to squeeze some fresh lime juice in there too and the result is amazing. The avocado, tomato juices, and lime juice, along with some Himalayan salt create the most amazing dressing that is delicious tossed with any other combination of vegetables and greens. Yum yum! I've been raw for over 2 years now and am still amazed by what you can create just by chopping or slicing a certain way or combining certain foods together before combining with other foods. Does that make any sense? LOL. Thanks for your fantastic blog, I'm definitely going to try some of your recipes. ♥

I tried this recipe and found it to be really tasty! I added some spicy peppers from the garden also. I may try cucumber or onions in place of the carrot for some reason I wasn't really feeling the carrots. This recipe is ingenious, normally with salads I use sea salt and lemon juice as my dressing, but the avocado and tomato dressing was just perfect!
