Raw food noodles... Oh my god, raw foodies...

You have probably heard about raw food noodles. I mean, real raw food noodles -- (not just zucchini or squash spun to LOOK like noodles, which are good too but that's not what I'm talking about here).

These raw food noodles made from kelp are so @#$%#$^&#$% delicious I am totally addicted to them and I have ordered a CASE of them to keep in my kitchen pantry. That's how good they are!! Lol

What are these raw food noodles?

Officially, they are called kelp noodles and they are made from sea vegetables. They have almost no calories in them at all (it's almost freaky), and they are raw. And even freakier still they DO NOT TASTE LIKE SEA VEGETABLES. They have NO TASTE but they have a perfect noodle texture, kind of like angel-hair pasta. They take on the taste of whatever sauce you use with them, and they do so very well. (Do not eat without sauce though. They taste quite boring alone.)

They came in a clean package and the noodles are totally moist (like freshly boiled spaghetti) when you open them up. You just rinse them and use them right away. One package serves two people with very large portions, or would do four people as a side dish.

What's the story? Why am I going nuts over these raw food noodles?

First, I bought a few individual packages of raw food noodles from this online store to try out the noodles for the first time because I'd heard raw foodies talking about them. Well, as soon as my kelp noodles arrived I almost died from pure raw food delicious bliss when I tried the raw food noodles mixed with my alfredo sauce (and then later with a home-made basil pesto sauce). The trick is to mix your noodles and your sauce really really well, try putting them in a big bowl that has lots of room. Add your noodles and sauce, and mix very well to make sure all the noodles are coated in your favourite sauce. Mmmmm!!

When I first bought a couple of packages the brand that was shipped to me was called Sea Tangle Kelp Noodles. I immediately loved the noodles so much that I thought, "Screw buying a couple of packages at a time from a specialty raw food store. I am going to call up this noodle company directly and order a case load!" The actual company that makes these noodles does sell cases of 12 packages for a very reasonable price to any old person like me.

Where to buy kelp noodles:

Buy one or two: In other words, if you want to buy a few packages of raw food noodles to try them out, shop at your favourite online raw food supplier, like The Raw Food World or wherever you like.

Buy 12 or more: But  if you're going to be buying lots of noodles like me just buy 'em by the case from Sea Tangle (noodle manufacturer) directly. There are twelve pacakages in a case.

Raw alfredo sauce with kelp noodles So, go get yourself some raw food kelp noodles, make a batch of my creamy alfredo sauce, mix them up together really well (with a sprinkle of pepper and parsley if you have them), serve with a nice salad and you'll think you've died and gone to raw food heaven. Have I lied to you yet???

My dear "transitioning to raw" girlfriend just sent me your website. Are these raw noodles used in Asian dishes. I think I have seen these in a Vietnemese restaurant. I can't wait to try them. I am very excited to be added to your email list. Thanks for all you do, it's inspiring. I am a TRANSITIONING TO RAW FOODIE. I'll say I am a work in progress. I need all the help I can get. Hi! Keep up the good work!!! Sounds like you're doing great. I don't think the noodles are very easy to find... You must make sure they're made of kelp--not flour or anything. I hope you do find them locally but...I doubt it. (But I hope you do!!) We are ALL A WORK IN PROGRESS. :) Warmth Laura-Jane
Just found your excellent site. Ctrl+D ! So these noodles don't require refrigeration? Very cool... I bet they would go well in a miso broth with other sea vegetables. I will be hunting locally to try them out.

Hi Blake, glad you found us! You are correct, they do not require refrigeration until opened. Good luck finding them locally! I wasn't able to find them in my area, but depending on where you are you might be able to find.
Hi! I have had these noddles! I LOVE them as well! lol But the store I found them in DID have them refrigerated. I'm wondering if it IS necessary to have them kept cold. Like you said they don't have a particular flavor but they do have an unexpected crunch! My hubby is transitioning (like myself) but he is turned off by anything "slimy". lol He was happily surprised that these are not. :) I also know of the noodles Kim Jackson mentioned. Those are mung been noodles. I was looking for them when I came across these noodles. I love them in a salad and in raw spring rolls. Yummy!

I don't think they need to be refrigerated until after they are open. Yes, they are crunchy! :)
Found the website while searching on google. Great recipes. I am a vegetarian and I cook from fresh vegies etc from scratch. Raw food mean...? I am new to this... any help?

Raw food is... fresh, unprocessed raw fruits, veg, nuts and seeds :)
Laura-Jane, I finally found these at Whole Foods Market. I have been looking everywhere trying to find them and the entire time they were at the store that I go to twice a week I haven't tried them yet. I'm going to try them this weekend with your Alfredo sauce. I hope they taste as wonderful as you say because I have to admit that they don't look very appealing;) I'll let you know how it goes.

What did you think???????? They taste even better if they can soften up for a bit, like, put your sauce on them, mix it up really good then refrigerate together for a few hours. They lose their crunch that way, which is a good thing :)
HI Rawtarian - I just tried these noodles for the first time crunchy with my sauce because I just could not wait 2 hours to try them! I'm curious, what do you think makes them lose their crunch? Could it be the type of sauce you are putting with it? After I ate mine with a homemade mostly raw almond satay sauce, I tried softening the remaining noodles with warm water for 30 minutes. That didn't take the crunch out. Curious for your thoughts. Cheers to Kelp Noodles!

I think it's the acid that does it - try soaking with water and lemon juice (very acidic) - that'll do the trick. Then rinse after
I *want* to love kelp noodles for all the reasons you indicated, but I just can't get past the crunchy texture. In my mind they remind me of some sort of sea creature tentacles... LOL, omg, it's a total mind trick. Is there any way to soften them up so that they are more like grain pasta, without losing the nutrients? I cook them into "Tofu Noodle Soup" for my vegetarian daughter who is 16 and not as squeamish as me. :D
My point is that I want to eat them raw, not cooked. My daughter is more interested in eating grain-free more so than cooked-free, so she doesn't mind that I cook the kelp noodles. She loves tofu AND kelp noodles. But for myself being a raw foodist for over 2 years, I want to be able to eat them raw.
I have found "sea weed" noodles in my local Asian market....they look the same as kelp noodles....are they the same? This might be a DUH question, but just checking to be sure....thanks so much!

hard to say. that would be awesome! are they packed in water and already moist? Then I'm guessing they are something similar. If they are dry and require cooking then they are not raw

Vitacost.com has the Sea Tangle Kelp Noodles $3.23 Going to try them even thugh I'm not RAW but I'm Wheat Belly (no wheat, grains, sugar, low carb) and my freind told me about your lemon bars and I'm going to try and substitute dried cranberries for the dates.

since dates provide the sweetness then you will need to add something else to sweeten if you are using cranberries - perhaps stevia?
I've only been 100% raw for the last week and until I found your site tonight, I was starting to feel a bit discouraged. Your site has convinced me I can do this...now I just need a dehydrator. I just ordered a case of these noodles online and I am expecting great things. Thanks!!

I hope you will like them!! Taurmini you simply must drain/dry them properly so they aren't all wet. Also, they have a weird texture at first so for best, most satisfying results you should coat them with your "pasta sauce" then let them sit combined for at least three hours so that the noodles lose their weird rubbery texture. In fact, quite often I will make my "dinner" about 5-6 hours in advance and throw it in the fridge to let them combine. Glad to be an inspiration to you :)
I may try the kelp noodles again, but my first experience with kelp noodles was horrid, lol. I let them sit forever in water and lemon juice to soften them up. Once ready, I stirred them in my sauce (a raw marinara sauce with avocado), I ate them right after just like "regular pasta" and um NO. The texture was like eating squeaky worms, lol. I think I made the mistake of not drying them before I put my sauce on, another issue could've been that I didn't let the mixture sit in the noodles long enough. My first experience with kelp noodles was fightingly traumatizing. I may build up my courage and try it your way, lol.

Lol squeaky worms is the best description I've ever heard of them when eaten right out of the bag lol lol. Try to do the sauce and then leave them coated with your sauce overnight for yummiest results :)
Hi LJ, I went raw foodist Jan 1st..I was Vegan for 2 years before that and Vegetarian for 2 yrs before that! So This is my next transition. After 4 days ..I turn to my husband and said," I don't think I can do this...!" He couldn't believe it coming from me! But I was starving!! Then I found your site! Your recipes are super delicious! (Better than the local veggie resturant offers...only 2 items that is!) I thought raw food wasn't good until I tried your tomatoe, carrot & avo salad. yum!! And so simple!! (Glad you didnt keep that to yourself!) And the chicken salad & Egg salad are soo quick & yummy! My husband wants half of everything I make!! (Altho i'm the only rawist in the house) I don't have any of the machines yet, so I just wanted to thank you for feeding me :) !

I was about to buy these noodles, but someone reviewed them on amazon and said that they aren't raw, they said that they are highly processed and mixed with the same basic ingredient that chewing gum is made out of. I'm going to look into it more because I was really wanting to get these/I'm disappointed.
