2 1/2 cups dried shredded coconut

3/4 cup coconut oil (liquid)

1/2 cup maple syrup

1/2 cup raw cocoa powder

1 teaspoon pure vanilla extract

1/4 teaspoon celtic sea salt

Directions

1. Add all ingredients into large bowl except the shredded coconut.

2. Stir with spoon until well mixed.

3. Once combined, add shredded coconut. Stir again until well combined.

4. Form into small mounds and place on plate. Freeze for half an hour. (Haystacks will harden when cooled.)

5. Store leftover haystacks in freezer or refrigerator.

No equipment required! Which means less dishes to clean, which is always a good thing!

These raw chocolate haystacks are awesome. I like to store them in the freezer for quick sugar fixes. These haystacks are probably one of my top 5 favourite recipes because they are really quick and really good! 

Best served cold, straight-out of the freezer because coconut oil will liquify again once warm.

To get the white-coconut effect as seen in the picture, roll your finished haystacks in some additional shredded coconut before freezing.

Is using the carob as a chocolate sub an equal exchange?

Hi Nicole, since carob has a weaker flavor than cocoa you could maybe add 1.5 times more carob. Example: 1 cup cocoa = 1.5 cups carob

Can the maple syrup be replaced with raw honey?

I haven't tried this recipe with honey yet, but since honey is sweeter than maple syrup I would reduce the amount a bit

Delicious! Even my husband loves them! I too, prefer totally raw. What I did was to use agave instead of maple syrup with a few drops of maple flavoring. Absolutely wonderful! Thanks for your website! I recommend it to everybody!

Yes Amy, I don't see why not - the powder is probably not truly raw but the recipe will still turn out well

I have many raw organic cacao beans. Can I crush these into a powder to use the raw cocoa powder? Or is that powder sweetened?

Hi Gina, no, the powder is not sweetened. However, I don't think you will be able to easily grind it properly.

I wanted to try this recipe, but my cold pressed coconut oil which is only a few months old has developed a funny smell, & a bit grey looking. Was expensive to buy can i use it? Has always been stored at room temperature. Was I supposed to keep it in the fridge? I didn't think it would go bad this quickly, expiry date is 2014.

Hi Uzzy, now that is interesting. I have never experienced that - generally my coconut oil is good for a really long time, and I do not refrigerate it (I just keep it in my pantry away from sunlight). If you really think it's funky then chuck it, but I am curious to know if you warm it up whether it liquifies normally and the discoloration goes away? Certainly, coco oil does turn white and harden when cool, but then it will go back to normal when warmed

Hi Laura-Jane, I melted the oil it had black slimy bits in it, strained it. Gone white and firm and the discolouration has gone, but that smell is still there. Don't know what those bits where.
I won't use it for cooking. Maybe I'll use it for my dry scalp.

I had this happen once. Just kept it too long. It wasn't worth keeping. I totally lost my taste for the virgin coconut oil when that happened and I tried to use it in a recipe. I really think it was rancid. Your nose will tell you. I now use the expeller pressed, which if it's a good brand like Tropical Traditions, is still very healthy, though not technically raw.

AMAZING I am making batches every couple of days for my family and I. Definitely satisfies the sweets craving without all the nasties you will find in conventional candy. THANKS xo

love this! and even better, my fiance did too! Just curious - why is there salt in it? Can I take it out completely? I halved it when I made it and it tasted awesome! I used himalayan sea salt... is that okay? Amazing straight out of the freezer...

These are my new favorite raw dessert! I love coconut, so I knew they'd be right up my street. However, I seem to be eating 1-2 golf ball sized haystacks everyday, so I'm now concerned that I might be consuming too much coconut fat! What do you think? Anyway, thanks for the great recipe!

Haha yep, I hear ya! But everything in moderation. It definitely depends what else you are eating. If you are generally eating well, lots of greens, lots of lovely fresh fruit and veg, I think you'll be just fine. :)

Hi Jess, these are pretty rich. I can't remember exactly but it might make 10 - 14 haystacks, and maybe you could budget 2 haystacks per person. So that gives you some idea of yields

I make them with organic agave. I have seen them made with part cacao, part carob. I don't like carob ever, so I skip it. Sometimes to save money I use part raw, organic cacao powder AND part organic, extra dark cocoa powder. I love extra dark chocolate, and these taste like that.
