1 cup almonds
1 1/2 cups soft dates
1 vanilla bean or 1 tablespoon pure vanilla extract
Zest from one organic lemon (do not omit this, it's what gives it the lemony flavor!)
2 tablespoons organic lemon juice (ideally from the lemon above)
1 1/4 cups dried coconut
3/4 teaspoon celtic sea salt
Directions
1. Place almonds in food processor and process into a fine powder.
2. Add dates, vanilla, lemon juice (if using fresh squeezed don't let any lemon seeds go into the recipe!) and lemon zest to food processor.
A note re: lemon zest: Lemon zest is simply lemon peel. If you don't have a fancy zester, just do what I do: use a clean carrot peeler and "peel" the lemon with your carrot peeler and throw the big chunky peels into the food processor for processing. Done! Process again until well mixed. Depending on how hard your dates are this could be a wild ride!
3. Once everything seems pretty well processed thus far, set food processor lemon bar mixture aside for a moment.
4. In a large mixing bowl, place your dried coconut and salt. Mix with a spoon to distribute sea salt.
5. Now dump your food processor mixture into the mixing bowl. Mix everything together with your clean hands so that it's nicely combined and resembling a delicious lemon bar dough!
6. Transfer your raw lemon bar dough into your final dish. I like to use a glass brownie dish. Now press the mixture down into the dish with your hands so that the mixture sticks together nicely.
7. Ideally, you should refrigerate your raw lemon bars for about an hour so that they really stick together and are easy to cut.
Enjoy your raw lemon bars! Their lemony coconut flavor goes really well with fresh or thawed strawberries. They should be stored in the refrigerator.

Raw lemon bars recipes... How do I love thee? Let me count the lemony-coconutty raw ways...
Before I went raw I used to love lemon bars made with lemon and coconut. Lemon bars are so sweet and flavorful and I used to eat them quite frequently as a sweet snack.
So when I went raw I knew I needed a substitute. Surprisingly, these raw lemon bars are easy to whip up and the taste is pretty similar to the lemon bar recipes that I remember from days of yore!
This raw lemon bar recipe is pretty easy to make, you just need to food process almost everything, mix recipe together with your hands, and then press it down into a pan with your hands. The toughest part of making raw lemon bars is getting the dates to process well, especially if your dates aren't fresh.
Tip: Be careful if doubling this raw lemon bar recipe. You might want to make two batches right after one another instead of making one huge batch because it can be tough to get everything to blend well in the food processor.
Tip: If your dates are rock-hard try softening them by soaking them in warm water for half-an-hour, then squeezing almost all water out of them before using in this raw lemon bar recipe.

Hi there...just found your site while searching for Raw Bar recipes for my boyfriend and his workouts...One question...are the almonds soaked overnight and then used in this recipe? or are they used straight from the package.

I made these tonight, oh wow, they are SO nice! I admit, I haven't made a properly 'Raw' bar as I had to compromise a bit on ingredients (but organic counts for something, right?!) but they are still VERY tasty and extremely moreish. Yum! I'm looking forward to trying a few more recipes :)

I am on day 2 of this raw cleanse, and its been fine not difficult like I first imagined. But I love to cook and was getting bored with not cooking, I stumbled upon this recipe and I am trying it out right now. I'm using dried mission figs instead of dates (just what I have on hand). I'm dabbling with raw recipes and I'm unsure about the whole soaking nuts. Do you specify when the nuts should be soaked for your recipes?

Yes, I do specify in all of my recipes.
Basically, if I don't mention soaking then you don't have to do it.
If I specifically say soak - then do it.

What calorie content do you think would be in these gorg raw lemon bars of yours? I know it's all good content ie nuts, dates, coconut but do wonder calorie per bar? Love your work by the way, amazing! Megs :-)

Hi Megs! Probably pretty high in calorie, but am not sure since I don't calculate them nor do I think too much in terms of cals. But they are nice and sweet and dense so a small square does the trick!

I tried these at a local raw food place and they are amazing. These are literally on my top ten of tastiest foods ever. I just made a batch for thanksgiving. It is the first raw food bar recipe I have tried. I am so excited to hear about your app because it is alleviating my intimidation of all things raw.

Hi Laura-Jane, just to let you know that I made these mine turned out crumbly I think I overdid it with the coconut as they were really coconutty. They tasted devine.
Your recipes should come with a warning (SERIOUSLY ADDICTIVE) as I can't get enough.
I am making your recipes now on a weekly basis. First it was the choc brownies made them twice already now these lemon bars omg i need to lose weight it is proving difficult as these recipes are soo good. Glad to have found you thou.

Haha Uzzy you are too cute! Mine don't normally turn out too crumbly, but it might have been because your coconut was abnormally dry. Next time, if you have any, you could add a TINY bit of coconut oil if it happens again. (But most other people should not need to do that because the recipe is generally fine as written)

I made these last night, and they are DELICIOUS!! However, they seem a little soft and sticky, not really something I could throw in my lunchbox and bring to work. Any ideas on whether they could be dehydrated a bit in order to make them more travel-triendly?

Hi Jennifer, I am racking my brain but all I can think of is that they are sticky. And yummy! Maybe you could roll a sticky ball in more coconut (kinda like rolling a truffle in cocoa powder), and that way there'd at least be dry layer on the edges :)
You could definitely try dehydrating as well

I tried this recipe with seeds as suggested by Ren. They were sticky, full flavored, and delicious. I will definitely be making these again. They got rave reviews in my house. I will probably serve them with yogurt next time. Makes a great topping.

Am loving these raw lemon bars absolutely delicious. Feel good about my 3yr old grandson eating them too as all good ingredients for him to enjoy. Am aiming in the new year to try and include lots more raw foods in my diet. I find the recipes you come up with great and most of them simple haven't a dehydrator so don't attempt those ones. I just came across your site this morning, and I couldn't stop thinking abut these lemon square all day, so I had to run out to the grocery store just for the dates! This recipe is amazing!! I cannot believe how easy and delicious these bars are! I decreased the shredded coconut to about 3/4 cups since I'm not a huge coconut fan and it was just the right amount for me! Will definitely be trying your other recipes too! Do you have the nutritional info listed anywhere?

It's really delicious! I didn't have dates on hand but had a huge bag of organic sundried mission figs so I used these instead. Also used Meyer lemon. DELISH!!!
