1 cup dried unsweetened shredded coconut
1 cup dry walnuts (not soaked)
4 medjool dates (or 8 to 10 cheapo baking dates soaked briefly and then discard water. The purpose of soaking them is to moisten them a bit if they're dry. If they're really fresh and moist, soaking is probably not necessary.)
1/4 teaspoon sea salt (do not omit!)
Directions
1. Place all raw pie crust ingredients in a food processor and blend until well processed but still slightly mealy/chunky. See the photo for an idea of the ideal texture. Notice how you can still see small flecks of dates? That's perfect.
2. Press down into your pie plate! Refrigerate before serving.
As I mention above, I like to refrain from topping this raw pie crust until it is ready to be eaten in order to avoid the soggy pie crust problem.
Top this delicious crust with your favorite berries or preferred filling and enjoy!
The Rawtarian's Thoughts
Raw pie crusts are an integral part of your raw recipe arsenal!
I just love this raw pie crust recipe. I mean, four ingredients and the taste of this raw pie crust is to die live for! I wouldn't change a thing about this one. The flavors and measurements are perfect, IMO.
This raw pie crust recipe is my go-to, standby raw pie crust. I like this recipe even better than carob or cacoa crusts. I have heard some people call this recipe a "shortbread" recipe, and this one raw pie crust recipe does remind me of shortbread... that salty sweetness takes me back to my childhood!
It is so simple and you can whip it up in a flash with some pretty basic ingredients. It also presses down very easily into a pie plate.
This recipe makes enough for one pie crust. You can top this crust with anything you like. I prefer topping this raw pie crust with thawed rasberries and other wet berries. I often keep the crust on its own, and I don't top it until we're ready to eat it to avoid the crust getting soggy. (I hate soggy pie crusts!!)

Yes, in this recipe you can substitute cashews for the walnuts. It might be kind of nice, actually. I am going to try it!

Hi Megan, yes, definitely. In this recipe you could use either pecans or walnuts.

Thanks for this recipe! I've now made it 3 times in 4 days! The first time I made an apple pie for thanksgiving, where people ate the traditional pie and my pie equally, and then when my cousin came over afterward, he are the rest and said it was better than any apple pie he'd ever had! I topped that one with sliced apples.
Second was a strawberry/Rasberry pie for a family gathering the day after thanksgiving, and it ended up being the only dessert, which everyone loved! They were very skeptical about an unbaked pie, but they liked it! For this one, I doubled the recipe and pressed half into the pie plate, and covered a regular plate with parchment paper and pressed the other half in there. Once I filled up the pie plate, I transferred the second serving on the top like a traditional pie!
There is another family thing tomorrow, and my sister requested the strawberry/Rasberry pie, so I just made a triple batch so I could make the crust a little thicker, and I can have the top!

I AM a raw pie superstar! Couldn't have done it without you! I took the third one to a cousins brunch (you know, us younger folks) and two of my cousins are doing paleo and were super excited to have pie!

I just made this and loved it! You're right, the salt is delicious and adds its own dimension. My salt is large grain and stood out, kind of like in sea salt caramel candy. I mixed two bananas with a little coconut milk, cinnamon and nutmeg, poured that on top. The bananas would have been amazing cooled in the fridge, maybe one day I'll get the willpower to wait, lol.

Willpower? What's that? Never heard of it! (lol just kidding)
This would definitely go well with bananas, methinks!

This is the BEST raw crust recipe ever! It tastes so much like the slightly sweet, slightly salty shortbread pie dough that I have always loved. Amazing how just a few dates make it hold together and be slightly sweet. The salt makes it divine. When I kept in the fridge it had a nice firm texture, not at all sticky and pasty like other raw crusts. I can't say enough about it, in case you didn't notice ;)

Yum, it it possible to use almonds or cashews instead of walnuts? I'm allergic to walnuts.

Hi Nat, the best sub for walnuts is pecans. You can use them instead of walnuts in pretty much any recipe because their texture is so similar. (This substitution does not go the other way though. In other words, do not use walnuts instead of pecans)

Made a strawberry pie (not raw). Had to use dried, soaked figs - couldn't find any dates in Portugal. But worked well! Absolutely delicious recipe. Thank you!

Hi Kahontiyo, sunflower seeds would probably work okay, but pumpkin seeds would be better because they are a bit oilier and a bit more similar to walnuts. A combo of both would be fine too. Good luck!

Yum Gabrielle. For those of you who don't eat dairy, try cashew cream instead or my raw fruit dip (cashew based). Love mango and creamy together!
