Crust ingredients:
1 cup cashews
1 cup dried, unsweetened coconut
1/2 cup dates
1/4 teaspoon sea salt
Apple pie ingredients:
3 (2+1) medium apples
1 cup dates
2 tablespoons lemon juice
1 teaspoon cinnamon
1/8 teaspoon sea salt
Directions
1. Place all crust ingredients in the food processor. Process until the mixture sticks together and the dates are well processed.
2. Dump crust mixture into your pie crust/glass dish. Press the crust down firmly in your dish with your hands. (Crust is now done.)
3. Roughly chop two apples, get rid of core/seeds. (Leave one apple alone, OK?)
4. Place all filling ingredients (EXCEPT THAT ONE APPLE, LEAVE ONE APPLE ALONE) in the food processor. Process until it's well mixed - a wettish mixture with a few small date chunks or apple peel that might not disappear. (You might have to pause and scrape the sides and then process again.)
5. Throw wet appley-mixture into a big bowl.
6. Slice the last apple into thin slices or small chunks. Throw these apple slices/chunks into the wet appley mixture. Stir gently.
7. Dump appley-mixture (wet + sliced apples) on top of crust. Smooth out with spoon.
8. Cover and throw in freezer. Ready in half-an-hour!
9. This raw apple pie recipe should always be kept in the freezer. (It'll get soggy if in the fridge.)
The Rawtarian's Thoughts
This is how it works: Just make the crust, press it down into a pan. Then process most of the raw apple pie filling, then slice the remaining apple. Stir together the appley-mixture and the sliced apple. Dump the appley-stuff on top of the crust, spread it out. Cover and throw this raw apple pie recipe in the freezer.
The presentation is "okay" and not something that I would serve to impress a stranger or my boss, but it's great for a family dessert that tastes great and satisfies that craving for apple pie - raw style!
When inventing this raw apple pie recipe, I used Granny Smith crisp green apples. You can use whatever medium/largish apples you have on hand. I do NOT peel any of the apples, don't bother.
Your easy raw apple pie will keep in the freezer for about a week.
Tip: Make the crust first and then the filling right after. (This way you don't have to wash the food processor twice!)
Tip: For the crust, if you don't have cashews you could use pecans (or walnuts) instead for the crust. (But cashews have the most neutral flavour, which is best.)
Tip: If you want to get fancy with your apple pie, you could top it with this yummy raw whipped cream recipe. (But I rarely do 'cause I'm not that fancy.)
Tip: You can stir in 1 tbsp raisins into the wet appley-mixture like I did in the photo above :)

I made this tonight as my first raw food recipe and it was really nice but very rich one slice and I was stuffed full. Also it tasted a bit salty but maybe I got the measurement wrong. Thanks so much for these recipe's. We just got a food processor so was really fun to make this. Also fresh dates are $24 kg in NZ so I used dried baking dates and it worked ok. Might soak the dates first next time.

Hi Kyle, I live in NZ too - I never use the fresh dates in any recipe - way too expensive. But i buy dates in bulk from gilmores and a quick soak - even 5-10 minutes before using them makes them work fine in all the recipes. You may find as you experiment more with raw, that you have to substitute cheaper nuts - nz can be pretty expensive for those too! Have fun in your raw food journey! Shirley

How about some cinnamon in it! to give that extra apple pie taste! you know what also tastes great to use a bit of raisins in the crust! they blend so well with apple flavor!

Sounds yum! I struggle with dates in the blender though - always becomes a bit of a sticky mess and doesn't blend properly...am I doing something wrong?

I made it in the blender...hard! But fun! I wish i had a food processor!!! Or a Kitchen Aid would be more amazing!!! While making the apple filling, I put the crust in the oven to bring the nutty flavor out! Wow, that made it more wonderful. Then I added the filling, and baked it again for 20 mins! So good! I love that i can freezzz this! Awesome! Thank you for an amazing healthy recipie!

Hi Tali,
Vitamix blender is for liquidy things (smoothie, sauce, soup, etc.) and food processor is for dryier stuff (brownies, cookie batter, pie crust, etc.)
No, the results will NOT be the same with a Vitamix. You definitely need a food processor, but it doesn't have to be a good one! I have had this one for 4 years and it gets the job done: http://tinyurl.com/avdwva4
To make raw recipes it is best to own an expensive, fabulous blender (like the Vitamix: http://tinyurl.com/b8a967w) and a cheapy food processor (like this one : http://tinyurl.com/avdwva4). They serve different purposes.

Hi Michelle, I actually get this one to slice up really nicely, like in the picture. Did you keep it in the freezer? Just make sure to cut all the way down to the bottom - because the crust gets really hard and it takes a strong arm to cut. But it does cut nicely and keeps its shape when frozen.

I made this and it turned out great. I added buckwheat and raisins to the base and added a dash of orange juice and raisins to the apple mixture. :-). Please keep the recipes coming. Thanks.

Hi Lorraine, I LOVE your addition ideas! Orange juice sure does add a nice zip of additional flavour. One of my goals is to provide basic recipes (like this one) that work perfectly fine on their own if you make them exactly as written, but that you can also jazz up the recipe in exactly this way if you are motivated and want to experiment a bit.... That way the recipe is accessible and not too overwhelming, but you can experiment with it as you like. So your comment makes me happy Lorraine :)

Hi Jerrod, normally I would suggest hempseed hearts as a sub for coconut in this recipe, although I bet the hemphearts would have more fat than coconut :)

Hi there! I made this yesterday & we had it for dessert after a gorgeous raw salad. It was delicious! I had to resist going back for more :-) Today we got a really great deal on "seconds" of pears, so I'm going to try something similar to create a Spiced Ginger Pear Pie. Wish me luck!

I have made this apple pie many times since December, the kids and my husband request it all the time! Because we eat so much of it, i have doubled the filling recipe and it tastes just as great! Even my non-raw-vegan family/friends like this recipe. Thank you so much for sharing it!

Hi Alejandra, it is used in baking - little pieces of flakey, dried white coconut. Purchased at a grocery store, used to make coconut macaroons, for example. You can buy it in North America in grocery stores in the baking aisle - there is usually a sweetened and an unsweetened variety

Hi JPS, no you can't omit it since you need that extra bulk. You can substitute hempseed hearts though. Or 1/2 hempseed hearts and 1/2 more cashews = 1 cup coconut in crust

Made this in my "Maya's Weekend Baking Adventures" Loved it. Had to make 2 cakes because I ate some (most) of the first cake during prep :) Def a good choice though! Still got some apples spare so planning on making another cake, or selecting a different raw apple recipe to :)
