1 cup of roughly chopped tomatoes (try not to lose any liquid when chopping)

1 sundried tomato slice

1/4 cup cashews

3/4 cup water

1/2 to 3/4 teaspoon celtic sea salt

1 small clove garlic

1/2 cup more diced tomatoes (reserve - do not blend)

Directions

1. Throw all ingredients (except last 1/2 cup of tomatoes) in a high-speed blender and blend up 'til nice and smooth and well mixed. You can let this raw tomato soup recipe blend in the Vitamix or Blendtec blender for a little extra time so that the heat of the blades and the friction actually warm up this delicious, creamy raw tomato soup recipe.

2. Transfer raw tomato soup to a bowl. Add the remaining 1/2 cup of diced tomatoes and mix gently with a spoon.

3. Garnish the raw tomato soup recipe with sunflower sprouts! Eat immediately.

This raw tomato soup recipe makes a nice big bowl for one person. :)

The Rawtarian's Thoughts

Raw tomato soup recipe - Does that sound tasty to you? For some reason I was really turned off by the idea of raw soups for a long time. For two years, actually! I was turned off of raw soups because I once made a raw vegan beet soup that was very gross and watery!

But I finally gave raw soups another go and was pleasantly--and I mean very pleasantly--surprised by the raw tomato soup recipe!

What I like about this recipe is that it's so easy. I mean, you've got tomatoes and cashews, basically. Can't get much easier than that!

A lot of other raw tomato soups call for avocados, but I like this recipe because I always have cashews on hand in my pantry so I can make it any time--rather than having to make sure I have a perfect avocado on hand.

looks good!
Thank you :-)

You're welcome :) As you can imagine, this tomato soup tastes best when using really nice heritage flavorful tomatoes (not boring hot house tomatoes).

Tried it tonight. Was delicious!

The Rawtarian's picture

Yum :)

This soup is delicious!!! I love cream of tomato and this ranks right up there at the top!!! Thanks!

The Rawtarian's picture

You are welcome. And it was easy, right??

Added 3/4 tsp of Italian seasoning and 1/2 teaspoon of holy basil for some superherb punch!

The Rawtarian's picture

Yum!

am enjoying it right now. so delicious and so simple. thank you so much

Is it ok to use regular table salt?

The Rawtarian's picture

Hmm. If you are using regular table salt reduce the quantity drastically and do it by taste.

Plus, make a note to pick up celtic sea salt the next time you're at a HFS. It's not very expensive and it's very good. It's non-iodized and the flavor really is very different.

I love this soup, Laura-Jane! I was out of cashews so I had to replace them with brazil nuts but it still came out delicious!
Now if only I could find a great raw "grilled" cheese sandwhich!
I have a recipe for a great raw bread that I use to make almond butter and strawberry jelly but I can't seem to find a good cheese recipe. Any suggestions??

The Rawtarian's picture

Mmmm raw version of grilled cheese is gonna be tough, lol... I would love it though, I used to eat a lot of ooey gooey grilled cheese growing up, that was definitely one of my fav. comfort foods.

So in terms of a good hard cheese recipe I haven't found any that I've been too impressed with either. I spent days and days making rejuvelac and seed cheese and it was pretty good but it wasn't worth the effort IMO.

I'll add it to my to-do list though :)

Hi Ashlyn,
I made a cream cheese sort of cheese for my raw lasagna with cashews and it was delish! 1 cup soaked cashews, 1 cup soaked pine nuts, 1 tblsp lemon juice, handful of chopped onion (i used red), 1 clove of garlic, some salt, process it all together, it will be extra thick and creamy, you will have to stop and push down from the sides, and viola! :)

I was nervous about trying a raw soup, but this was really good! It was so creamy!!! I loved it.

I have never done raw food, I'm currently on a detox and seriously considering raw food... I love alfredo so I'm gonna give your recipe a try. I have a question which pretains to your tomato soup... When i eat alfredo i usually pour marinara on it and almost make a vodka sauce. So can this soup be used as a marinara sauce... I would also like to make spagetti n meatballs.... any thoughts

The Rawtarian's picture

For meatballs try modifying my meatloaf recipe:  http://www.therawtarian.com/raw-meatloaf-recipe

This soup recipe would NOT work well as marinara sauce. It's too soupy.

Hope that helps!

my first recipe on my raw diet path. YUM! Looking forward to trying others. Muchos Gracias!

The Rawtarian's picture

My pleasure Sarah. If you like this one try cream of celery http://www.therawtarian.com/raw-cream-celery-soup-recipe

that sounds amazing. I think, I think I know what I'm going to have for dinner :)

The Rawtarian's picture

:)

I had it for dinner, was really tummy! Thank u so much.

My pleasure Nadia

Ooh, just tried this and it's delicious! With a nut allergy though, I had to try substitute and the closest I could get was roasted soya beans so used them (soups still mostly raw!)

The Rawtarian's picture

Next time try adding avocado instead of nuts for creaminess :)

Can you make ahead for next day?

The Rawtarian's picture

This would probably be ok made one day in advance, however you will want to give it a good stir and also probably warm it up a bit (in bowl in dehydrator maybe?) because it might be a bit odd completely cold right out of fridge. Or if you could reblend in blender that's warm it up again - but it will also dirty your blender again so might defeat the purpose of making in advance :)

Hi...I can't wait to try this. Do you have to soak the cashews first? Thanks!!

The Rawtarian's picture

Hi Lori, no, you do not need to soak the cashews

RAWSOME ! I have done about 7 variations of this recipe in addition to your original version ( which is great) and it seems hard to screw up. I have use red peppers / substituted cashews with RAW sunflower seeds - have used avacoda - Cayanne - on one occasion I added 2 tbs of organic pasture heavy cream ( of course now its 90% raw) They all are so easy and so great.

Thanks a million and by the way you are Rawckin sexy !!

Peace
julie

When you have made a red pepper soup you think is awesome I give you permission to let me know by email.

You genuinely rock

Will do Julie!

Addendum to above : that is Red BELL peppers

good to know

Wow this soup tastes amazing! I usually don't bother to comment on anything online but after having a bowl of this I have got to let you know recipe is going to be a staple here!

Hi Michel, so glad this recipe tickled your tongue the right way! I like it a lot too - it's a great intro to raw soup. Celery soup is good too!

Recently fully raw... Been experimenting for a while. Didn't dare try soups cause the thought freaked me out... Until this week & almost gave up on the whole soup idea until I tried this Recipe. My 10 yr old daughter wanted to make tomato soup herself which opened it up for me to attempt a raw version for me (she says she loves her cooked food but she's always trying my raw experiments) I closed my eyes & tried my soup & was very pleasantly surprised. Needless to say we both found our favorite homemade version of tomato soup tonight! Very interested in a good cream of mushroom if you have any suggestions. Thanks for all you do, I've been reading & trying your recipes for a long time but I've never commented... You saved my perception of raw soups tonight- kudos!

The Rawtarian's picture

Hi Melissa, I felt the same way about raw soup!! I didn't have my first (good) raw soup 'til I'd been raw fod at least two years! I do have a cream of mush that is good too:  http://www.therawtarian.com/raw-cream-mushroom-soup-recipe

I just made this today and it was yum! Even my 18month old son liked it! We are new to this Raw way of eating so to be able to make nice simple things is very helpful! Thank you again!

The Rawtarian's picture

Hi Pia, Glad that you and your little one enjoyed this. It is nice and simple, and quick too, perfect for lunch

Really good except I feel that avocado would have been better to make it creamy and more soup like. I ended up using this as a raw pasta sauce which was awesome!

The Rawtarian's picture

Hi Rachel, it sounds like you found it too thick?

Hi. I'd love to try this for dinner tonight. I don't have sun-dried tomatoes, (and I'm in the Costa Rican jungle where I'm not likely to find any). Can I make it without. I DO have plenty of avocados so might like to try with them, as nuts are hard to come by, here. Thanks.

The Rawtarian's picture

Hi Lane! The sun-dried tomato serves two purposes - helps to soak up some liquid (thicken the soup a bit) and also to give a slightly more tomatoish flavor. I think if you dial the water down a tiny bit and maybe add half or even a quarter of avo instead of the sundried that'll be deelish!

All your recipes sound super delicious and I'd love to try a raw vegan diet but do you miss having your food hot at all? I really enjoy having a nice hot breakfast and dinner in the winter and I couldn't imagine eating cold foods all the time. Thanks in advance for your feedback :)

The Rawtarian's picture

Hi Megan, I can honestly say that heated food is not something that I miss! But there are specific ingredients or textures that I do miss. You just get used to it, and it becomes your new normal :)

this was so delicious & easy to make. thx Laura :-)

The Rawtarian's picture

My pleasure Rienne :)

Just found your site......love !! I'm an organic gardener, and I can't WAIT to try this soup with my homegrown tomatoes this summer !! Thanks for all the awesome ideas !!!
