1 cup walnuts

10 sundried tomatoes, soaked for at least one hour, preferably a few hours.

1-2 tablespoons olive oil

Chili powder (start with 1/4 tablespoon, then add more to taste)

Cayenne powder (start with 1/8 teaspoon or less!)  (This measurement has been revised and is better now!)

1/2-1 tsp sea salt

Directions

1. Soak your sundried tomatoes for at least one hour. Drain and pat dry before using.

2. Simply add all ingredients to the food processor and blend until it become the consistency of the photo above.

The Rawtarian's Thoughts

I have been a vegetarian since 2001. Once I went vegetarian I immediately replaced meat with soy products.

One of the most difficult parts of my transition to the raw lifestyle has been to give up the soy and tofu products that were staples in my husband's and my diet.

As you can tell by the ingredients, this raw taco meat recipe is quite small. Double up as necessary. I seem to like small recipes because I am thrifty and I want to try a small batch before I invest 2 cups of this or that into a recipe that doesn't turn out well.

This raw taco meat recipe has been an excellent, hearty base and my husband loves it--more than I do, even.

I often spread this recipe on romaine lettuce, and I top it with tomatoes and fresh sprouts. Sprouted adzuki beans go surprisingly well with this recipe.

you're welcome. It's nice and filling. I haven't made it lately. I should try it again soon

I didn't follow the recipe EXACTLY but it eventually came out so good I had to make myself stop eating it. :-) Had it wrapped in lettuce leaves.

This is the second raw recipe I've tried, after trying some raw fettucini alfredo and zucchini noodles. I've been desperately looking for good recipes that didn't have a thousand obscure, expensive ingredients and which would thrill my picky palate. I love this one! Thank you so much!

Is there a way to make "taco meat" without the nuts? They're expensive and I hear they're fatty.

The Rawtarian's picture

Hi Shauna! I absolutely love your website, btw! Work your quirk! love it :)

The nuts are integral for the texture of this recipe. And if you pair a smaller amount of taco meat with a larger amount of lettuce, tomato, etc then I think you will be fine :)

Serious perfection. I didn't bother to measure the spices because it's my opinion that a girl cannot have too much spice. :] First time I made it, I used the oil-packed sun dried tomatoes, and it turned out very rich and divine. By the third time, I started adding a whole jalapeno and the regular sun dried tomatoes. Still divine. Soooooooooo much better than TVP, it is really quite incredible. Thank you again for a fantastic recipe!

This was amazing! I didn't add any oil to keep it light, and it still was so good. I stuffed it inside a red bell pepper for lunch and it was fantastic :)

This was so-so good thank for this, really helps with my began transition. So delicious and reminds me of real taco meat (not that I miss it :)) A++

Love it Tommy! Curious to know what you served it with?

Hi I just tried the raw taco meat and it tastes like walnuts with chili seasoning am I doing something wrong?

The Rawtarian's picture

Perhaps this recipe just didn't do it for ya in terms of the flavours? I don't soak the walnuts first. Perhaps you needed to add more oil or process longer?

My sun dried tomatoes are in oil should I skip the soaking part? And how long will the taco mixture keep in the fridge?

The Rawtarian's picture

Hi Mary, Since your sundried tomatoes are already soaking in oil then you don't need to soak. This recipe keeps very well in the fridge in a sealed container - probably for 3 days or so.

This is one of my favourite recipes! Thank you! Thank you! I usually have it on a salad:

just on a simple bed of crunchy lettuce with shredded carrots -no dressing - is amazing and quick. The taco meat seasons the salad.

Also super good with tomatoes, avocado, and lime juice added to the salad, and macadamia sour cream if you want to get super fancy :)

Hi Liz, because I am getting good at this raw food stuff although I have never had carrots with this taco meat recipe I just KNOW that that flavor combo would be AWESOME! In fact, I have always felt that the recipe was missing something, and I think that is IT! I am really looking forward to trying this with shredded carrots, they are going to add a lightness and moisture that was missing. Thank you for writing!

Hallo!! I was so tired of eating just an apple or just carrots...so I googled raw food recipes and your page came up. I made this dish last week and I just have to tell you... I LOVE IT! Everything about it was delicious!! Thank you so much for this website...so many wonderful choices and they all seem fairly easy (I have a fantastic talent for destroying food in the kitchen). I'm going to try the macaroni and cheese next! THANK YOU SO MUCH! A big hug to you!

And hugs to you, Angel! I too have a similar talent, which is why I have to keep things simple lol. Glad to have you here :)

My parents came over for dinner and I made these for them to try, they loved them! My super picky meat eating husband loved them too! Soooooo good!

Hi Gabrielle, keep working your magic! :)

I am definitely going to make this one. I have been searching for a mushroom free version of vegi mince and at last here is one. I can't stand mushrooms :)

The Rawtarian's picture

Hi Becky, we all have our detested items. Mine are pears, which people seem to think is weird. But I can't stand 'em! Mushrooms are on my okay book though :)

Dear Laura-Jane.
What a brilliant website you have! I have spent the last two days on it trying to figure out how to get started on the raw journey (after the arrival of my new vitamix :-))

I made cashew milk this morning - yum!!

I have such a basic question that it seems rather silly, but I am reading through the wonderful dinner recipes like taco 'meat' and zucchini pasta and I am very much wondering how you heat these to serve? Or if you do at all? Do you serve heated? If yes, please tell me how?!?!? hahah

Thank you so much and look forward to hearing from you
Harmony

Hi Harmony, woohoo new Vitamix!

Not a silly question at all. In short, not heated :) But you get used to it, and if it's the right recipe it's not that weird. Seriously!

By the way, you might find becoming a member of www.therawtarian.com/TRK useful - we've got lots of fabulous people in there going raw together starting March 4th. It's fun, and good group support.

Is it ok to ask why you decided to become a vegetarian?? And then after that a rawtarian?? :-)

Hi Emmeline, this older video explains it a bit: http://www.youtube.com/watch?v=IrC9UY7SOWU

And here's a wee write-up :) http://therawtarian.com/how-i-became-raw-vegan/

It was awesome but I hate the smell of sundried tomatoes! Do you have any idea what to do about it? And how do you wrap the lettuce?
Thanks!

The Rawtarian's picture

Hmmm, smell of sundried tomatoes.... Perhaps you can use the ones that have been soaked in oil first, they don't smell as bad.

Lettuce wraps, very simple. I just lay out a big piece of romaine, fill it up lengthwise, and then close it lengthwise and gobble it up!

My boyfriend is allergic to walnuts, pecans, and hazelnuts what can I substitute in your recipes for those?

The Rawtarian's picture

Hi Katrina,

1. You may find this podcast helpful: https://www.therawtarian.com/rfp05-nut-substitutions  (you can download it in iTunes - look for "raw food podcast" - episode 5)

2. Generally, these groups of nuts can be substituted for one another:

  • creamy nuts: cashews, macadamia nuts, pine nuts, etc.
  • flour-like nuts: almonds, sunflower seeds, hazelnuts, pumpkin seeds, etc.
  • oily nuts: walnuts, pecans, etc.

3. In this recipe, it really does need an oily nut - like pecan or walnut - so best to try a diffferent recipe instead

I love this recipe!! I'm going to make it for a "Raw Mexican" food potluck my friends and I are having soon. One friend cannot tolerate nuts, so I'm going to substitute sunflower seeds instead. I know the taste will be different, but hopefully it will still turn out well!

The Rawtarian's picture

Hi Adrienne, Sunflower seeds are a good choice for this recipe if you can't do nuts.
