1/2 cup almond pulp (squeezed, dry to touch)

1/2 cup cashews

1 cups dates

5 tablespoons cocoa powder

4 tablespoons dried coconut

2 tablespoons honey or maple syrup or agave nectar

1/4 teaspoon sea salt

Directions

1. Place cashews alone in your food processor and process until they become small and crumbly. You are making flour out of cashews!

2. Add dates to the cashews and process again until the mixture sticks together and the dates are well processed.

3. Add the remaining ingredients and process again until the mixture turns a lovely dark chocolatey brown. Stop processing before it gets too buttery. (There should still be air between the small bits so that you will be able to press them down into your pan.)

4. Dump the mixture into a brownie dish or small cake pan and press down very firmly using your clean hands.

5. Throw this raw almond pulp fudge recipe into the freezer. This fudge should always be kept in the freezer. Slice before eating and eat right out of the freezer. They won't turn rock-hard. They will be nice and chewy. Do not refrigerate or defrost.

The Rawtarian's Thoughts

This recipe is only for those of you who have leftover almond pulp from making almond milk in your blender.

(If you do not have leftover almond pulp, then do not bother making this recipe! Make my regular raw brownie recipe instead.)

For an even more delightful fudgey dessert, ice the fudge with raw chocolate icing before freezing. (Not necessary though, still very good without the icing.)

I would love to make this recipe but unfortunately cannot have coconut. Could I simply make the recipe without coconut or should I substitute it with something else?

Hi Jerrod, I'd recommend using hempseed hearts instead of dried coconut in this recipe.  (But if you don't have access to hempseed hearts then simply substitute with the equivalent amount of cashews)

Wow It is soooooooooo good ! Fortunately I got all the ingredient on hand, actually I was looking for the recipe that uses left almond pulp ^^ I 'm going to eat this on Christmas eve with my family! Thanks a lot The Rawtarian !

Hmm so Im not sure if you have ever tried making these in the vitamix but I did and it didnt go so well, just a heads up for anyone planning to try it that way :) I ended up having to scoop it out and mix it by hand and they turned out to be SUPER dense, in the picture yours look so yummy and almost cake like, these were more like dense flat bars. Any suggestions if I don't own a food processor? I try to rely on my vitamix to do it all but it didn't work out in this case!

p.s. I just found your site and adore it my boyfriend had to drag me away from the computer and the kitchen today lol! Thanks for all the great recipes!

Hi Naomi! You absolutely MUST get a food processor. It opens up so many doors for different raw food recipes. In short, blender is for SMOOTH, LIQUIDY STUFF (smoothies, sauces, icing etc.) and a food processor is for DRYER STUFF (like brownies, pate, pie crust,  etc.). You don't need a very good food processor. You should be able to get one for $60 or less at your local big box store. Just make sure to get one that is pretty large, like it holds at least 6 or 8 cups. Totally worth it. Hope this helps and glad to have you here!

I made the same mistake you did! I read "food processor" - but since I got my Vitamix, everything gets translated into "put into Vitamix." Didn't work so well for this recipe. Ooops!

Glad it turned out well for you Jennifer :) I like it too! It is very different than other similar recipes with say nuts instead of pulp. It's chewier I think!

Made these for tea with a new friends who is curious about my raw food thing. I added a touch of almond extract and made them nice and flat by putting a piece of wax paper on top on rubbing them with a coffee mug. Can't wait for her to try them!

Hi MJ, if you make almond milk (blend almonds and water) then you have to strain it - and you are left with almond pulp in the strainer. Basically, just tiny bits of almonds. If you don't have almond pulp you can just use almonds instead :)

OMG! I made these last night, and couldn't wait to dig them out of the freezer when I got home today, and boy was it worth the wait. They are SO delicious, and after I'd eaten my first piece of fudge, all I could think about was eating more (and more, and more, and more)!

Very addictive, and I reckon you could make this into an awesome chocolate mud-cake as well. We make almond milk every day or two, so I'm always keeping any eye out for ways to use the leftover pulp, so thanks for creating such an awesome recipe.

Just wondering, I have some almond pulp that I dehydrated and have stored because I didn't have a use for it yet. Do I need to re-hydrate the pulp before adding it to the recipe? This sounds really good and I want to try it out soon as I can.

Hi Rebecca, just add a TINY bit of water to the recipe when making, maybe 1 tbsp (or even a titch less) and that should do it

I made some almond milk and I had A LOT of left over pulp. I put it in the fridge for a day and some of it dried. I came across your page and I had everything in my pantry for this recipe so I tried it and I LOVED IT! I'm tempted to eat it ALL, that is unless my husband eats it all before me. I couldn't cut it as neatly as you, so I'm going to possibly put it on wax paper next time so it's not sticking to my pan. I didn't dehydrate my pulp until today, is that why it's sticky? Either way, it's delicious. Next time I'm making a larger batch and sharing with family and friends. Thank you for this recipe! I'll be sharing it on my blog shortly, all credit to you!

Hi Zoi, so glad you enjoyed it! It's a great way to use up almond pulp. I don't actually dehydrate my pulp at all in this recipe! Also, I didn't cut it until it was frozen, so that may have had something to do with it too. Hope this helps!

You were right, as it had more time in the freezer, it was easier to cut. I still have a lot of almond pulp leftover, looking around the internet for some suggestions. Would you have any? I'm reading mixed reviews about making almond butter with it, have you ever done that?

Also, for this recipe you could use macadamia nuts or  pine nuts instead of cashews. You could also use pecans instead of cashews. Hope this helps!

Just came across you site looking for things to do with my growing supply of almond pulp (recently started making Almond milk for my son and he loves it) Looking forward to making this this but have a question. I have a "budget" food processor that only has a couple of blades. One is a slicer and shredder type and the other is a standard "S" blade. Will this work. I did't have much luck with it when i tried something last week ...just got a big dough ball stuck to the side and no matter how much I prodded it with the spatula, it just got whipped to the side again. :o( Also, will a "bargain" blender work for your raw chocolate icing or do I really need the power of a high-high speed one? Hi Mel, great questions!

1. S-blade should do the trick! It definitely depends on the recipe. I think this recipe should be fine if you follow the directions. My food processor is actually pretty crappy too (I have this one: http://tinyurl.com/avdwva4 )

2. Bargain blender for the icing: yes, it'll work. If your dates are really hard, try soaking them in warm water for 45 minutes first. Then pat/squeeze them dry and blend in the recipe. (This will soften them and make them easier for your blender to blend.) But make sure not to let too much extra liquid get in the recipe, because it'll change the consistency if you're not careful

Awesome. Thank you. I started with the Superfoods Brownie and the S blade worked there. I recently ordered a Nutribullet (the economy Vitamix ha ha ha) and will give the icing a go once it arrives. I used up my kitchen gadget budget on an Excalibur dehydrator, so for now, other than the Nutribullet ... I'll be making due with the "budget appliances") Loving your site and your recipes. First time EVER I'm not hopeless in the kitchen. Maybe I never learned to cook because I do better with Raw. Thank you for making it possible!

Hi, I had a quick questions. I was wondering if I can omit the dates, or can I replace it with anything?

Hi Amina, The dates are used for both sweetness, stickiness and texture. So they must be replaced by something sweet and sticky -  dried prunes are the best substitute, but raisins can work too.

Make these all the time now but ran out of cashews so swapped for hazelnuts, and then added some orange zest and juice and a spoon of coconut oil. Just chucked in freezer but its looking good!!!

For years I have eaten junk food and a friend introduced me to your website and the food looked so divine that today I went to the health shop, stocked up on nuts etc. and have just made your choc pudding with chia seeds and your brownies using left over almond meal from the nut milk I made for the first time.
