1 cup walnuts
10 sundried tomatoes, soaked for at least one hour, preferably a few hours.
1-2 tablespoons olive oil
Chili powder (start with 1/4 tablespoon, then add more to taste)
Cayenne powder (start with 1/8 teaspoon or less!) (This measurement has been revised and is better now!)
1/2-1 tsp sea salt
Directions
1. Soak your sundried tomatoes for at least one hour. Drain and pat dry before using.
2. Simply add all ingredients to the food processor and blend until it become the consistency of the photo above.

I have been a vegetarian since 2001. Once I went vegetarian I immediately replaced meat with soy products.
One of the most difficult parts of my transition to the raw lifestyle has been to give up the soy and tofu products that were staples in my husband's and my diet.
As you can tell by the ingredients, this raw taco meat recipe is quite small. Double up as necessary. I seem to like small recipes because I am thrifty and I want to try a small batch before I invest 2 cups of this or that into a recipe that doesn't turn out well.
This raw taco meat recipe has been an excellent, hearty base and my husband loves it--more than I do, even.
I often spread this recipe on romaine lettuce, and I top it with tomatoes and fresh sprouts. Sprouted adzuki beans go surprisingly well with this recipe.

I didn't follow the recipe EXACTLY but it eventually came out so good I had to make myself stop eating it. :-) Had it wrapped in lettuce leaves.
This is the second raw recipe I've tried, after trying some raw fettucini alfredo and zucchini noodles. I've been desperately looking for good recipes that didn't have a thousand obscure, expensive ingredients and which would thrill my picky palate. I love this one! Thank you so much!
Is there a way to make "taco meat" without the nuts? They're expensive and I hear they're fatty.

The nuts are integral for the texture of this recipe. And if you pair a smaller amount of taco meat with a larger amount of lettuce, tomato, etc then I think you will be fine :)

Serious perfection. I didn't bother to measure the spices because it's my opinion that a girl cannot have too much spice. :] First time I made it, I used the oil-packed sun dried tomatoes, and it turned out very rich and divine. By the third time, I started adding a whole jalapeno and the regular sun dried tomatoes. Still divine. Soooooooooo much better than TVP, it is really quite incredible. Thank you again for a fantastic recipe!

This was amazing! I didn't add any oil to keep it light, and it still was so good. I stuffed it inside a red bell pepper for lunch and it was fantastic :)

Perhaps this recipe just didn't do it for ya in terms of the flavours? I don't soak the walnuts first. Perhaps you needed to add more oil or process longer?

My sun dried tomatoes are in oil should I skip the soaking part? And how long will the taco mixture keep in the fridge?

Hi Mary, Since your sundried tomatoes are already soaking in oil then you don't need to soak. This recipe keeps very well in the fridge in a sealed container - probably for 3 days or so.

This is one of my favourite recipes! Thank you! Thank you! I usually have it on a salad:
just on a simple bed of crunchy lettuce with shredded carrots -no dressing - is amazing and quick. The taco meat seasons the salad.
Also super good with tomatoes, avocado, and lime juice added to the salad, and macadamia sour cream if you want to get super fancy :)

Hi Liz, because I am getting good at this raw food stuff although I have never had carrots with this taco meat recipe I just KNOW that that flavor combo would be AWESOME! In fact, I have always felt that the recipe was missing something, and I think that is IT! I am really looking forward to trying this with shredded carrots, they are going to add a lightness and moisture that was missing. Thank you for writing!

Hallo!! I was so tired of eating just an apple or just carrots...so I googled raw food recipes and your page came up. I made this dish last week and I just have to tell you... I LOVE IT! Hmmm, smell of sundried tomatoes.... Perhaps you can use the ones that have been soaked in oil first, they don't smell as bad.
Lettuce wraps, very simple. I just lay out a big piece of romaine, fill it up lengthwise, and then close it lengthwise and gobble it up!

I love this recipe!! I'm going to make it for a "Raw Mexican" food potluck my friends and I are having soon. One friend cannot tolerate nuts, so I'm going to substitute sunflower seeds instead. I know the taste will be different, but hopefully it will still turn out well!
