3/4 cup cashews

1 carrot

1 apple

1 tablespoon chopped onion

1 tablespoon lemon juice

1 teaspoon dill spice (optional)

1/8 teaspoon sea salt

Directions

1. Place all ingredients in your food processor.

2. Pulse very briefly. Just pulse once and take a look!

3. Contine to pulse briefly to get the a "chicken-salad" type consistency that is quite chunky, like the attached picture. Go slow!

4. Consume immediately.

The Rawtarian's Thoughts

I like to use a crisp green Granny Smith apple or Gala apple in this recipe, but any apple will do. I use a medium-to-large apple.

Don't over-process, because it will look like the attached pic in just a quick pulse or two! So go slow.

This recipe does not keep well AT ALL. Just make it immediately before you want to eat it, and eat it all or force other people to help you eat it!

This makes a great side salad. It's a bit heavy for a whole meal, but I have eaten it as an entire meal on occasion.

PS: I am so addicted to creating pie recipes that it was hard for me to buckle down to make a savory recipe, but I know that they are both important!

PPS: I got this salad to stand nice and stiff like that because I used a "food mold" for the first time. Handy little buggers!

I did it! and I added 1 baby zucchini as well and just half of the nuts, cuz I didn't have more at home! so I replaced that with 1/4 of a big avocado and it turned out absolutely amazing! Thanks for the fabulous ideas! only 10 more likes to 10,000!!!!!! yay!!

Anything that you want to make again is success in my world!

My non vegan husband loved it! So simple and tasty. When I served it on a thin layer of mixed greens with chopped avocado it made for a beautiful presentation and we ate it for our main (only) lunch meal. It looked and tasted fancy like I slaved over it for hours instead of only 2 minutes. I didn't have any dill so skipped it this time. Looking forward to making again with the dill.

Just made this salad. I added a lil Garlic, pepper and some celery and stone ground mustard....I always add stuff tho

Adding stuff is always part of the fun, Barclay! Actually, that's what I try to do is prepare a good base recipe that can be jazzed up a bit as you like it.  :)   It keeps the recipe simple and good on its own, but also  allows you to play a bit too!

I just whipped this up and it is delicious and SO simple. It will be great on a hot summer day. I like some of the suggestions for adding other things, but it can certainly stand on the basic ingredients listed! I am looking forward to making more of your savory dishes.

Hi Kim, thank you for your excellent idea! I have added this to my app to-do list! Not sure if/when it will materialize cause this dang app was complicated to get built, but I love the idea and I will be advocating for it!

I love all of your recipes. They're my go to recipes, which I do on a daily basis. Would you please add the serving size on these? It's probably a no brainier to most, but I'm a little slow. Thanks again for your wonderful gift!

Ronda, now THAT is a very good idea about a serving size section. I have added to my to-do list! Not sure when it will happen but I like the idea and I think it will happen eventually! It just makes sense to have it

What if I do not have a food processor?
I can just chop up everything and mix together, but I wouldn't be able to add the cashews

Hi Tanika, this recipe won't work well unless you use a food processor. I say refrain from making it until you get one. They are not very expensive, $50 or $60 should do it from  your local big box store. Very worth the $!

Hi Gianni, I simply chopped them up very roughly before hand. For example, I chopped the carrot into 3 or 4 pieces and as -  for the apple - I chopped it into four sections and roughly cut out the core. That's it!

Am eating it right now. I used rosemary instead of dill (that was what I had in the cupboard). And I sliced some avocado into it too.

This is great.. Will certainly be eating it more often.

Made this tonight for a paleo couples dinner, introducing some non paleo friends to the goodness of healthy eating. Everyone loved this and asked what the dressing was, and couldn't believe it was just lemon juice. I didn't add the dill rather serve it with epicure dill topper to suit individual taste.... Fantastic!! Everyone raved about it. Thank you I am a fan and am now hooked!

I am the same way, Jacksotc. If I like something, watch out, I just might eat it every day for two weeks heehee. The nice thing about this recipe is you can switch it up a bit to make it a bit different depending on what you have on hand - just try to keep the textures the same and it should work out great. :)

Just made this & it is so refreshing and YUM! I omitted the onions, but added a little curry & ginger. Deelish!

I'm a college student looking to eat more raw foods.. with a limited budget and materials, this recipe was perfect. I absolutely loved it. it was easy, and DELICIOUS. I thought I would have to go out of my way to go raw but this was easy to make on the go and I loved how much substance it had for so little calories. Thank you so much.
