I have done it. I love fermenting foods. The key, as I'm sure you know, is to have everything perfectly sterilized. How is the sauerkraut looking so far?
I still have my sauerkraut going but I think I will just throw it all out. I used an airlock for the first time and realized later that I had forgotten to put water in the airlock. The sauerkraut itself is still under the brine. I had pressed it down well with the pickle pebbles and that part worked great. But since I don't really know what I am doing I guess I will throw it out and start over even though I know it might still be ok since it is well under the brine.
