Question about Enzymes

Is it true that when you pre-cut fruits and vegetables, they lose their enzymes the longer you leave them? I’ve been told to only slice the amount that I need and to leave the rest uncut to preserve the enzymes. Is there any truth to this at all?

    Oxidation does destroy vitamins and enzymes. I don’t have a more scientific explanation, but yes, there is truth to it.

    It is a good idea to just cut up what you need and leave the rest whole, because it goes off quicker if it is cut up.

    But for health reasons, I don’t think you’d notice any difference between cut and uncut in your body or well being.
