ALFREDO SAUCE

1. Put all the ingredients (except the zucchini and parsley) in a blender and blend until very smooth. If using a Vitamix, this also warms the sauce and it’s ready to serve over noodles.

2. Otherwise, slightly warm in pan or dehydrator before serving.

MEAL ASSEMBLY

3. Make zucchini noodles by using a vegetable spiral slicer, mandoline, or creative knife work.

4. Put noodles on plates, mix with sauce, and top with bell peppers and peas or mix all ingredients together.

5. Serve slightly warmed and garnish with parsley.

It’s an excellent transitional recipe for those new to raw foods.

Suggested alterations: Substitute water for coconut water; substitute agave for honey; okay to omit yeast.

Laurao, what kind of spiralizer did you use? I want the angel hair effect too. I don't have a spiralizer yet, but am going to get one, just not sure which one to get yet. Thanks. This looks so good.

I have not been able to eat pasta for years let alone enjoy the cream sauce that comes along with it. I am definitely going to make this tomorrow night. Thank you so much for exciting my taste buds.

Wow, that looks awesome, but I'd probably use all pine nuts and no cashews since they're too expensive to get raw online.

This is luvly... i used half pine nuts and half cashews as it was way too strong for me half way thru as i was adding the pine nuts... i added the rest but i put extra nutritional yeast and it is yummy.... thankyou, i really miss creamy sauces... (i use to eat them on their own even... i am a die hard fan of creamy sauces...) :)

OMG!!!!!!!!!!!!! The only thing I miss being raw is the real thing of this. I will be trying this recipe out tomorrow. I am salivating just looking at the picture. Thanks laurao for showing me I can make this! Can't wait to taste it.

Good comments, and I did use the nutmeg and just a pinch of allspice... and DUH, I did use nutritional yeast (I'll change that on the recipe - thanks!) Always good to hear comments!

I like it. But I'd use nutmeg instead of allspice and nutritional yeast instead of brewers yeast. Just my personal preference I felt like sharing :).
