Ingredients
2 tablespoon apple cider vinegar
¼ cup sesame oil
3 cup beetroot, grated
3 cup carrot, grated
½ cup walnuts, coarsley chopped
1 cup flat leaf (Italian) parsley, chopped
½ cup chives, snipped
Recipe Directions
- Add all in a bowl together, mix well
- Splosh olive oil and apple cider vinegar over it as dressing, mix well
- Enjoy!

I make this all the time but minus the walnuts and parsley. I use rice vinegar too instead of apple cider. Walnuts sound like a great addition though... thanks!

Mmmmmmmmm!!! This salad is so delicious. I used all of the ingredients, as listed and it was perfect! Definitely going to be high on my rotation from now on!
