Recipe Directions

1. Pre-Prep: Wash/rinse the sunflower seeds very well and then soak in water for at least 4 hours (6 is better). Rinse and shake the seeds dry in your strainer or allow to air dry for a while.

2. In your food processor, process the dry-ish ingredients (sunflower seeds, salt, and pine nuts) into a fine meal.

3. Add the lemon juice and olive oil. Process again until smooth. Scrape off sides as needed. Get it so it is rolling as it moves around your processor.

4. Process until smooth yet very thick. Don't be scared to let it go for ages because the longer it goes the creamier it is. Then at the end, add the green onion and process slightly to break them into the cheese.

5. Allow to stand for 30 minutes. (If you taste it while it is being made or right after, expect the lemon to stand out. It dies down after it has sat for a while.)

6. Optionally, you can shape into cubes or balls and dehydrate for a while to get a firmer cheese for cheese salad, feta, etc.

Zoe's Thoughts

By Zoe

The easiest, creamiest, and tastiest cheese ever! This just takes a few minutes to make and is our second best seller.

For a nut-free option, use 3 cups of sunflower seeds and no pine nuts.

Just hold her and think about how much you love her, it will do the same as Reiki.

Really! That's a relief, I thought that if I spayed Blueberry that she would lose her "funny ways". She acts like a tiger, puts her back up high and twists it at the same time like she is going to kill me. haha Not to mention running around the house all the time and hiding under the couch while I'm sitting on it to attack my feet. When we first got her, we fed her canned food for like a day or two because we were looking for the right vitamin supplements and raw food. Then, we transitioned her to raw, and wow the changes were immediate and amazing. She just turned into an energetic tiger. She plays "finger fights" with me. It's not really violent, just really hilarious. That all makes sense about wanting to keep him as a pet, I wouldn't want my cat to be uninterested in me and just sex. Yes, Siamese are VERY talkative and this cat is certainly no exception. We are going to get another one in the fall as a playmate for her, it is going to be a Balinese, or Siamese with a long fur. I wonder if this one will be a tiger too.......

Yes I neutered him. Yes I know it isn't right but neither is keeping an animal as a domestic pet, really...but there it is, I had to have him and so he is a pet...

I have a friend who breeds Siamese and he has unneutered males, he says that all they are interested in is food and sex, they really aren't pets if they keep their bits at all. His uneutered males live in pens outside. I decided that as he was a domestic pet that it would make it easier on him to be neutered, so he wasn't always yearning after sex etc, and also to prevent him spraying. He is extremely fit and healthy with a huge personality. And he is a very devoted companion, we really are joined at the hip! He follows me around everywhere and normally is attatched to either my lap, my ankle or hanging over my arm. He is very talkative, he makes words like noises as well as more normal miows (or "me now" as I hear it!) he plays jokes and tricks on me all the time, he is a bizarre character, unlike any animal I have ever known.

I gave him Tons of Reiki healing after he was neutered, and being raw helps, I am sure...

Btw Zoe, I was wondering did you neuter Tonka? I was wondering if neutering them takes their spirit away, but Tonka looks so full of energy and spirit. I am trying to figure out whether to spay Blueberry because she is so full of spirit and is so unusual I am afraid and wondering whether the neutering affects them in some way.

No lol that's not true. Goo to wikipedia and it says under the avatar: the last airbender search that there will be a 2 hour movie at the end of the season fire. The season will be released in early May, so they have to finish the season before then. Episodes 18-21 will be packaged into a 2-hour movie. In one hour (7 pm) it will air. Aren't you looking forward to the movie where Aang is gonna fight the Fire Lord? I can't wait!!

RawKidChef, I have NO IDEA why they stopped playing the show in the middle of Season 3! I hope they didn't cancel it like they canceled Invader Zim in 2001! (gasp) but my brother thinks they'll start playing Avatar again this summer... hopefully sooner

Guess what! I just made some of this and spread it on some sheets of nori, then rolled it up with some butternut squash, red bell peppers, and baby romaine lettuce leaves. It looked a lot like sushi, and my mom wanted to try some and LOVED it! she said it made her day. :D I'm gonna post the recipe next week when I make it again.

man rachel I know! I saw the Black Sun, and I'm like, this is too exciting, why did they have to pause there?!! I really wanted to see them get to the Western Air Temple with Zuko. When do you think they are going to start up again with new episodes? I know on Nicktoons Network (a different channel in the Nickelodeon that's ON DEMAND) they air the old episodes (from books 1 and 2) But I want some new ones!!

RBBAlive - use a big handful of basil. Experiment with the oil, It doesn't have the same texture or taste with less, but everyone's tastes are different.

Chris made it without the spring onion and with red bell pepper and basil last night, it was the BEST!!

I just made this and rolled it up in some large green lettuce leaves with bean sprouts and tomatoes. Delicious! Thanks so much, Zoe for sharing this one. It's like tuna salad without the fishy flavor.

Zoe, it's actually just an old Osterizer, and it's 21 years old (my parents got it as a wedding present) so they probably don't sell that kind anymore. I probably should take better care of it, lol

Thank goodness for the 'Favorite Recipes' section otherwise I would have missed this! I didn't have spring onions so used a tiny wedge of brown onion and made a smaller serve in my Bamix mill. As the mill started to get hot the whole coagulated into a lovely smooth cheesey mass that I was able to shape into a soft block. Thanks Zoe it's a winner :)

This sounds delicious Zoe. I am going to try it with all sunflower seeds and basil. Do you know how much basil I should use? Also, can i reduce or avoid the oil?

rachel what brand is your blender it sounds tougher than a vita mix!

jsorensens2 thanks;) you could make it cheaper by reducing the pine nuts and adding more sunflower seeds, I haven't tried it though, it would probably taste just fine.

Zoe - this is a fabulous recipe! It is fast, easy and really delicious! I mmm and ahh every time I eat it. I made little clumps of dehydrated cheese for my salad too and oh boy it is great! It sure makes a lot, so I cut the recipe in half. Pricey with the pine nuts, but I hate to change it - it's so good in it's original combination. Thanks!

Yes!! I love that show. I'm a big fan of the Zuko and Katara pairing, lol. Do you know why they stopped playing it on Nickelodeon in the middle of Season 3? or is that supposed to be a cliffhanger? I wish they'd start playing it again!!
