Recipe Directions

1. Grind up the crust ingredients in a food processor until it starts to ball up pretty good.

2. Press into regular size pie pan with your fingers. Take it all the way up the sides of the pan.

3. Process filling ingredients in food processor until blended well.

4. Pour into pie crust. I like to top mine with sliced almonds or shredded coconut. It's great served with fruit on the side too!

5. Make cashew cream in a Vitamix (makes it fluffier, although kind of hard to extract, but worth the effort). Stream in the water slowly to your desired consistency.

I just made this pie, and it was wonderfully easy to do. Only my second raw food recipe! The texture of the chocolate was velvety, and the cashew topping was sweet and creamy. I used dried nectarines in the crust instead of apricots, and that was good too!

I have been making different variations of this pie, and I eat them every day - for breakfast, or just for a snack in the afternoon. Great way to keep me full and satisfied as I am just transitioning to completely raw. Thank you so much!

I make the filling sweeter, and I haven't made the topping, but the pie is great even without any topping.

Thanks for the idea to use avocados - I have been wanting a pie that wasn't just nuts. I adapted from this and created a chocolate coconut pie that I posted on here today. Yummy!
