1 cup Coconut butter/oil, soft, but not liquid
2 tablespoon honey (can sub. agave, I assume)
½ vanilla bean
½ cup macadamia nuts, whole or slightly crushed
¾ cup dried blueberries
I like to prepare this in a shallow dish or bowl just large enough so that when done, the mixture is about 1/2 to 1 inch thick.
Mix Coconut butter/oil with honey in a shallow dish. If coconut butter is liquid, they will separate, so chill in fridge to get mixable consistency if necessary.
Scrape out vanilla bean, add to mixture, mixing well.
Sprinkle macadamias and blueberries on top and press down until all blueberries and macadamias are in the coconut mixture.
Pop the whole thing in the freezer until hardened.
You should be able to break off pieces using a butter knife, but you can put these into ice cube trays for the perfect portion size. Store in freezer.
Oh, this is soo yummy! Feel free to play with different dehydrated fruit and nuts, this just happens to be my favorite combination!
