1/2 large lemon or 1 small
4 slices of fresh cucumber
1/2 cup red cabbage
handful chopped parsley
2 leaves romaine lettuce
fresh coconut meat or flakes
1/2 cup olive oil
juice 1/2 lemon
1/4 teaspoon sea salt
pinch black pepper
You probably get the idea from the photo, but this is how I did mine.
Salad: Cut the tomato into slices. Cut the lemon into wedges. Slice the cucumbers and then cut it down the middle but not all the way, to make a fancy butterfly like design. Process or grate the red cabbage. Process or grate the carrot into thin strips. Break up the parsley. Grate the coconut like you did the carrot (into thin strips like grated cheese would look).
Dressing: Mix everything together, taste test, it should be tangy from the lemon but not too sour. You can make more by doubling or trippling the recipe!
Place the lettuce down on the plate. Drizzle a small amount of the dressing over. Place the rest of the veggies over top like pictured. Outline the plate with the lemon wedges and the tomatoes. Pour the rest of the dressing evenly over top. Lastly, top with the coconut stripes or flakes to look like cheese.
