½ cup cashews
1 tablespoon agave or maple (not raw) syrup
pinch himalayan salt
½ lemon or lime (juice), You can use the rind too if you like
½ almond essence, vanilla, whatever, (optional)
water as needed to mix, but keep firm
.125 cup coconut flakes
Vitamix or blend or process everything except for the banana til smooth. Serve it on top of thickly sliced banana pieces.

This recipe started with a modified version of the Cashew Icing that Crisyn posted (shout out to Crisyn!!! Thank you!) I just had some left in the frig and felt like a sweet and grabbed the closest thing on my table…a banana. If you make the topping ahead of time and chill it for a while, it is thicker and IMHO tastes better for this recipe. My very-not-raw DM loved it! Hope you do too!
