Not really sure what just happened, but it turned so thick, my spoon could barely move in it! What I got was a very delicious thick pudding!

Recipe Directions

1. Peel grapefruit, leaving seeds and white pith attached.

2. Put in Vitamix and blend high for 20 – 30 seconds.

3. Add salt and flax oil. Blend variable and slowly raise to 10.

4. Pour into glass (or bowl) immediately.

It got thick because you made an emulsion. You suspended tiny droplets of oil in the other medium, the juice. It's how you make mayonnaise. This is very clever of you:-)

hmmmmm... very interesting! I'll have to try this out! I love Grapefruits and other fruits and its hard for me to "sacrifice" them for a recipe :) I'll try it out, but i'll half the recipe first :)

Either "so thick my spoon could barely move" is hyperbole or something went wrong for me....

I did it in the FP, could that be it?

It is still pretty good but more like soup. I would also recommend using coconut oil if you aren't fond of the taste of flax.

I am really excited to explore more things like this...once I can get them to work. Thanks for happening upon this! (Any idea about where I went wrong?)

yeah.. its like a grape-fruit aoli. would be tasty with a raw dessert like cookies or you could put it in a crust..
